So I am getting married today and instead of a cake my soon to be wife and I are having a Croquembouche for our dessert. When the restaurant where we are doing our reception asked to see what that was I showed them your video from a big night in when you made that hazelnut Croquembouche. My son and I have a bit of a split decision. My son would like James' better if it had more meat. He likes the veg and all, but it's really veg heavy instead of celebrating the beautiful pork. You could just have easily used a cheaper meat if you were only going to put a tiny bit on like that.

It also came to Europe from Tangier, a Moroccan city in North Africa, hence "tangerine". Both are like a classical orange but flatter and the segments easily split from the peel, and the taste is different. A clementine is a smaller, seedless variety of the fruit. Also, for those of us in the US, when the guys use the leafy green they call "coriander", we call it "cilantro" or "Chinese (or Mexican) parsley" since we find it often in those dishes. In the US, "coriander" is reserved for the seeds of the plant. Just FYI that most folks probably already knew.
There are several varieties of mandarins/tangerines, such as the seedless clementine. They are only exotic if you cannot grow them yourself. They need a warm climate. Enjoy! They are my favorite citrus fruit

I've made my own bahn mi's (though I use Kewpee mayo instead of homemade and usually use bought baguettes), so Ben's sandwich is more intriguing because it's different. I'm with Barry on that. Definitely points for creativity. And he made chips (crisps).
My vote is for Ben. He did something unique that was well executed, balanced and smart. Although James sandwich was also very well executed and balanced, I found it safe. He has made Bánh mì sandwiches so many times and he knows the guys like the sandwich a lot. Ben could have made something close to that sandwich before, but he didn't know how the guys would react to the flavours he combined. If you base it on how most food competitions judge (Taste, Execution, Plating, Creativity) I would have to give Ben the win over James based on creativity. I also don't believe, and I could be wrong, that a 90min or less baguette would be amazing. Especially that the bread didn't have time to rest and set properly. I haven't been able to make a proper 90min or less baguette and I've been a chef for ten years making bread every day. Although you could say that Ben went safe and less ambitious, I think it was a smarter overall choice. Great Job to both gentlemen tho. The food looked great and from my experience, probably tasted even better. Cheers

Banh Mi is nice, we all know that. BUT Ben's Sandwich was so much more creative and innovative, I would never ever thought of putting black pudding in a sandwich. I love this Sandwich!

i only voted for the banh mi because i love spicy food... but honestly, i'd eat both of those sandwiches in one sitting... with the crisps... and more beer.
If I just saw the sandwhiches I could swear that Ben made the Bahn Mi and James made the British sandwhich, but I'm so glad to see the boys have stepped out of their comfort zones!
