@John Bowden Your post won't let me reply directly so I hope you see this. I just did a big batch of smoked bluefish with all trays full. I have several smokers and can tell you there is NO perfect smoker. This one does a good job especially for the money and ease of use. I use my offset and my pellet smoker too. I still dig this MES40! I use it mostly for bologna and snack sticks. You will have to watch uneven internal temps by rotating the trays on longer cooks. I can cook more evenly on my pellet or my offset but with a LOT more work! There is a trade off. This is still a great smoker to have for anyone. A friend of mine recommended this exact smoker to me, after I told him I was looking to purchase a pellet grill. I enjoyed your video and you sold me on this product.
You'll like it a lot. I still Love my pellet grills though. The MES is a great cooker but once you;ve had it a while and ready for some more adventure, try out the Camp Chef Pellet grills too! There are going to be a lot more vidoes coming for those very soon.

Nice video, I've had a masterbuilt electric smoker for about two years now and it is awesome. Still works like the day I got it, in cold weather or hot. I don't have anything bad to say about it, we'll worth the $.

I know this is an older video, but I got the same smoker and mine is a little older. I know this because before they upgraded the chip loader it was made of plastic. Every time I cooked it melted to the cooker and the only way to get it loose was heat it back up. But Masterbuilt sent me the new chip loader and it has been amazing since. Thanks for the video and I recommend these smokers to anyone!

Great review thanks! I just ordered a similar model, 30". One thing that stands out that I think you eluded to, if you take care of it it'll be a great smoker. Some of those other reviewers that put down this smoker don't take care of it. Their smokers are full of grease and such and just not well taken care of. Really enjoy your videos. Thanks again!

Mr. Greg, what a great job explaining this. Question: When you smoked that rib for five hours...how many times did you have to put wood chips in your hopper?
Eric Srisavaththay I added chips about every 30 -45 minutes or so until they got wrapped so I guess 4 or 5 times. You can also use less chips and add more often when the smoke stops if you like. at that point, there is no point in adding any more (because they are wrapped anyway!) Good smoke flavor.

Great video. I've been doing a lot of research on what smoker to buy and I have decided on this one. I pick it up next week, plenty of time to practice on it before deer season, making snack sticks and bologna. How did you run 3 probes at a time in your snack sticks? Does the smoker come with that many probes?
nope, only has one. I have a couple other probes. They don't cost very much. One is a real nice BBQ probl by maverick. Should be a link in the description below the video.
@rodl12 I do still have it and have had no issues with it ever! I have a collection of smokers now and this one mostly does large sausages now. I prefer the Camp Chef XXL pellet smoker for flavor and it fits just about everything. Thanks for the video. I just got the same smoker but haven't used it yet. The first thing I noticed is my air vent is on the top and not the side like yours. Wonder if they made some gradual revisions. Any tips you can share would be super helpful. The tin foil tip is a great one.

Great review! Just to be clear, the lowest setting is 165 degrees? Im looking to get the same one, was just wondering if it would be possible to make jerky.
SupraStringing11b Yes you can do jerky in it. Lowest setting is very low, like 100*. Not sure exactly, but I have started mine way low before for bologna and eased it up over a 14 hour cook. There is a link to it in the description too.
excellent review. I have a 30" MB electric and just did a 16 hr pulled pork butt for all my friends 3 days ago.. I apparently need to open a restaurant now..... It's all about how you use the tools you have. Currently we have a 7lb whole chicken, seasoned, with apple chips in, and will add 6 ears of fresh corn on the cob within 2hrs of completion... note: if you're in this to get the best outcome, you better devote some time to ensuring it comes out that way. The end results always = the amount of effort put in.

Great review. I just got a really good deal one of the Bluetooth models. It was less than the regular digital model, so i jumped on it. Seeing that this review is over a year old now I was wondering if you've had any problems with your unit?
+Bagster 78 No. No issues at all! I have several smokers and keep them inside the garage so they don't get the typical weather related issues. That's a great question though. Anyone can love their unit when it's new. After a year, it's still my "Go To" smoker for sausage, Bologna, and jerky.
Thank you been looking at this exact unit at sams club I have a electric barrel smoker now this is my second one like 120 bucks it just don't get hot enough to maintain a good temp I have to leave a shoulder in it for 16-18 hours plus if it gets cold at night I have to wrap it in a blanket or it would b 20 hours sams wants 335 dollars is this a good price or should I look else where great review

Do the electronics on this unit allow you to set multiple temp/time settings? For example, I read somewhere that when cooking snack sticks it is best to cook them for an hour at 140 then another hour at 160 and then finished them off. Might be off on time/temp numbers but hopefully you get my drift.
You said you over-smoked the venison sticks...do you recommend not adding wood chips as often, or just cook them for a shorter time? Thanks for your posts, very helpful!
hankwhitley No not at all,. but you have to be careful when smoking food. You can over smoke it and especially in an enclsoed environment like one of these smokers. Meat takes smoke easily. Some protiens more than others. Also too heavy a smoke for too long can leave a bitter after taste. I advise all new smokers to take it easy. Less is more, then work your way up as needed. Don't stuff that chip hopper each time, you don't need too.
Thanks for touching on keeping that glass clean. I just picked up one of these for my Father-in-law and I wanted to know about that. Question: What chips do you use? That loos like a bag of "Western" brand apple chips in this case. Those are semi-coarse as opposed to the "Smokehouse" brand that are pretty fine. Looks like what you are using is working well though. Any thoughts on chip selection? Thank you, Sir!
+Steve Baker I have had good luck with all the chips I've used. Have not really paid attention to brand and even dropped saw dust/chain saw chips in it and pellets. (Although I think the standards chips worked the best overall) It's an addictive hobby for sure haha. Merry Christmas!

+halo27legend Thanks for the suggestion! I might do that. I have found that on higher temp cooks you get a lot of moisture condensing on the inside that loosens everything up. Wiping it off with an old towel when you open the door gets the glass amazingly clean. I see if I can't get that done.

Still have it and still use it. I've had no trouble with it at all. It lives in my garage under cover when not in use and I use it mostly for sausage, jerky and smoked fish.

Scott they sent a CD with the smoker, but it doesnt work. The CD, to smoke a pork but and a brisket should I use one rack or two, they will fit on one. any quick info would be great, how many time do you fill with wood chips during one smoke and do you empty ash after every use or every time you add. Scott Taulker Yes it has a water pan, and no I never soak chips. THat's just a myth and best avoided. Water will not smoke. Smoke comes from lack of air.

i have used gas and charcoal smokers a lot. i just bought the masterbuilt 40" electric because i wanted to stop the cycle of constant monitoring the smoker. I did my first smoke last night it was a rump roast. It got brown but no amount of char or crust on the meat after 5hrs at 225. is there any suggestions you have before i try it again to get a bit of char on the meat during the during the smoke? would it help to run it at 275 for the first hour to help get the char. thanks
THat'sa good question. One of the down sides of electric is it is harder to build up a bark. I would try it hotter. I frequently smoke on the solid fuel rigs at 275* or even more. it works out fine. (BTW, So does Myron Mixon!) :-)

I have the older version of this electric smoker. I purchased it from Masterbuilt I liked it but the electronics went out after it was 9 months old. I had to buy another Electronics module. The second module lasted 6 months and stopped working. I tried to order another module and found they don't make them any more. I did not learn this until after it was back ordered for almost four months. The new version of this smoker has the electronic display in the front, mine is in the back. Masterbuilt's warrenty really sucks.

You'll need to add the cold smoker attachment to not have to refill the chip tray or use on of the other devices like the wedgie. I would not go to sleep on a long anyway. My buddy and I have this same smoker and it smoked good the first handful of times, now it only smokes the first time it gets up to temperature and hardly smokes at all after that.. My buddies does the same thing. We have both checked the burners and wood chip pan for any buildup and there is none. I would highly recommend using a smoker that has an external smoke box so you can smoke at any temperature and even do a cold smoke.. Mine doesn't even smoke anymore unless its over 200 degrees and its not even that old
I love my masterbuilt if you want a good tip for long cooks like brisket and pork butts set the smoker to 200 degrees first 2 to 3 hours. Love the cook. keep smoking t&t bbq
Can this smoker be safely stored outside with a grill cover, on a deck, under an overhang? I really want this thing but don't have a ton of storage space in my townhouse
+Paul Summers Yes, people do that all the time. The better you can cover it, the better off you'll be. I've had mine rained on while smoking and it didn't hurt it.

+Paul Summers Yes, and I like the glass. It is easy to keep clean by just wiping with a rag while it has condensation on the inside from cooking. That's all it takes. In fact, there is a bologna going into it sometime this week. :-)

Murray Armstrong They have a cold smoker attachment like this one: goo.gl/vF7gz1 I have it, but have not used it yet. Should work well. For serious smoking, the air'flow and temps are a bit uneven. I guess that is the difference between a $400 unit and a $1200 one. Works good for the $ and I am going to be doing Bologna in mine again tomorrow.

Mike Revelle at my house probably 50' or so. I actually don't use it much anymore. The machine is stable enough that I just don't really need it. It's a neat little gizmo though.

Ken Brown Does not hold much. Probably about a cup. You get about 45 minutes to an hour of smoke tops. You can add a cold smoking acessory to it for about 8 hours of smoke, but you really don't need it unless you are doing cold smoking. Personally I think about every house is a good time to check on your stuff anyway, and then add chips.
i have a question. i just bought this smoker last week and just started smoking. when i set the temperature at 225 while smoking if it reaches over 230 or so the hesting light cuts off and cuts back on around 225 degrees. is this suppose to do this
Yes, Your oven in the house will do the same thing. It's working on an "Average" temperature as the element cycles on/off. Some may run a little hotter or cooler than others. It's very normal.

I have the older Masterbuilt 30" with no glass. I'm about to replace the digital controller again (3rd time) because display is practically unreadable. If they don't have the part this is the model I want - need. Cheers..
I never add water to the tray. I foil the drip tray for easier clean up but have not found the need for water at all. In the closed environment of the smoker, there is no drying out. In fact when you are trying to dry out stuff like jerky, You'll need to open the door sometimes to let moisture out!
I have two questions: How hard is it to clean this / does it make a mess in the smoker when using? Can I keep this on the patio during the summer? Will rain cause any damage to it if left out uncovered? I ask the first question because someone tried to sell me one for $80. However the thing was filthy and smelled like they owned it for 5 years and never cleaned it. I had to pass after the opened the door on it, however I'm still interested in buying one (was eyeing one today at Home Depot).
+Andre Outlaw I just wipe mine down when I'm done. If you don't leave fat drippings in the bottom, it will never stink. It will however get that great smokey "Seasoning" smell. That's good! +Andre Outlaw Be careful, haha, I ended up with 5 cookers (so far) From cheap gasser I converted to a really good charcoal grill (With Grill Grates of course), a Royal Tailgater pellet grill, The MES40. My Modified Chargriller Pro is really good smoker for charcoal and sticks, and the Weber Genesis on the deck. Best of luck!
I'm using a Wedgie now. In fact I like the wedgie with pellets from bbqpelletsonline.com BETTER than the chips anyway! I get 3 hours of smoke from one load and that's more than enough. I even use it on my gasser for a little "Kiss" of smoke there. I don't have anything that I really want more than 3 hours of electric smoker smoke to cook anyway as I've found that this thing is sealed so well and the smoke so dense that you can over smoke just about anything in it if you are not careful. Pellets are a lot milder and richer than chips in my opinion.

Thanks for the tips, I did a large Chicken the other day, the skin turned out like Rubber, but the meat was juicy and smokey flavored. I think I used too many wood chips. Slow Smoking a bird will tend to make the skin rubbery. Cook it hotter (all the way up). Chicken does not need much smoke. You might even cook it skin down near the bottom rack
Those Deer sticks will make you want to hit one with your car! haha. This smoker is great for things like this. Wait until you see what I have coming in the next couple of weeks! Thanks for watching.
Yes, DON'T! Water does not smoke. It will steam away and then the chips burn up just as fast. Water does not absorb wood very well. (Rember they used to make BOATS out of wood!) Once the outer fibers well up, not more water comes in. To get smoke, you are starving them from air which this machine does well. on a regular grill, or smoker you are better off using a foil pack sealed tight with chips in it and one or two small holes. This starves them for air and they smolder and smoke very well.

Great video; thanks. I have had my 40" for almost two years; same model. No real problems with it. I have smoked everything in it, but I have ended up using it as an oven to put smoke on items (and that is good). Try heating pizza on it; awesome! Ask me how I did it. I did hard eggs on it with no ice and they were great. I keep mine in a garage like you do, but if you don't you may get the problems idahodeerhunter got (moisture on electronics). Check his videos out (very well informed) because after two years mine is starting to not getting up to temp and I think I'm having a problem with the element.

SillyDogGaming Yes. I have used pellets before and it works fine in mine. I don't put to many in at a time, maybe 1/4 cup at a time. Just personal preference really. I don't know if they would flare up or not if you put in more but that produces plenty of rich smoke. Thank you for watching! The Smoke Cycles. Sometimes it's heavy, sometimes light and in between stoking it you can see fine. I find that a quick wipe with an old towel when condensation develops keeps it very clean without scrubbing at all. I love the window.
They do a great job for those not wanting the hassle of charcoal. But for Something I want a real smoke, lump Charcoal is the only way to go. I have wore out 3 masterbuilt's and we are ready to replace the Acorn with another.

I just upgraded my MES to the new 40" Bluetooth Sportman Elite.. waiting for it to be delivered. Also.. while it ultimately coems down to personal personal preference.. the "experts" will tell you that you dont want "fall off the bone" ribs. Thats a sign of over cooked ribs. You want a rib rack that is pliable, but doesnt tear about from being so flimsy. They will tell you to do the tongs test. You should be able to pick up a rack of cooked ribs with tongs and they should slump over, but not fall apart. Nice video none the less.
Nicholas Johnston I know, I'm not a fall off the bone guy either (because I am an expert haha) But most people like them overcooked unfortunately. They don't know any better. This was the first time I made them on this smoker too. Not bad. Still prefer solid fuel for "Real" BBQ but this thing rocks for sausage, bologna and jerky!

+halo27legend Thanks, (I think haha) I'm not sure how it could be biased though if I spent my $ on all of my cookers. Certainly the electric is better for some things due to ease of operation, but for a seasoned smoker it's really hard to beat a solid fuel unit especially on certain proteins. The winner of "PitMasters" last season used a Pellet grill! For me personally, I use the electric on snack sticks and sausage things, bologna and fish (Although the uneven heat distribution inside the unit is starting to drive me nuts) My pellet grill/smoker for all things chicken and sometimes brisket flats due to ease of operation. then my COS charcoal/wood cooker for all things pork.

@John Bowden Your post won't let me reply directly so I hope you see this. I just did a big batch of smoked bluefish with all trays full. I have several smokers and can tell you there is NO perfect smoker. This one does a good job especially for the money and ease of use. I use my offset and my pellet smoker too. I still dig this MES40! I use it mostly for bologna and snack sticks. You will have to watch uneven internal temps by rotating the trays on longer cooks. I can cook more evenly on my pellet or my offset but with a LOT more work! There is a trade off. This is still a great smoker to have for anyone. You'll like it a lot. I still Love my pellet grills though. The MES is a great cooker but once you;ve had it a while and ready for some more adventure, try out the Camp Chef Pellet grills too! There are going to be a lot more vidoes coming for those very soon.

I know this is an older video, but I got the same smoker and mine is a little older. I know this because before they upgraded the chip loader it was made of plastic. Every time I cooked it melted to the cooker and the only way to get it loose was heat it back up. But Masterbuilt sent me the new chip loader and it has been amazing since. Thanks for the video and I recommend these smokers to anyone!

Great review thanks! I just ordered a similar model, 30". One thing that stands out that I think you eluded to, if you take care of it it'll be a great smoker. Some of those other reviewers that put down this smoker don't take care of it. Their smokers are full of grease and such and just not well taken care of. Really enjoy your videos. Thanks again!

Mr. Greg, what a great job explaining this. Question: When you smoked that rib for five hours...how many times did you have to put wood chips in your hopper?
Eric Srisavaththay I added chips about every 30 -45 minutes or so until they got wrapped so I guess 4 or 5 times. You can also use less chips and add more often when the smoke stops if you like. at that point, there is no point in adding any more (because they are wrapped anyway!) Good smoke flavor.

The best book you can get is this one by Mike Mills. This was and still is the reference book I go to. Best overall BBQ basic book in my opinion and you'll learn how to make your own rubs and sauces too! Everything you need to know about time and emp is in it.

Great video. I've been doing a lot of research on what smoker to buy and I have decided on this one. I pick it up next week, plenty of time to practice on it before deer season, making snack sticks and bologna. How did you run 3 probes at a time in your snack sticks? Does the smoker come with that many probes?
nope, only has one. I have a couple other probes. They don't cost very much. One is a real nice BBQ probl by maverick. Should be a link in the description below the video.

Yes I'm with you. I like a little pull to a rib I don't want the soft fall off the bone type rib. So what is the internal temp for a rib that is tender but with still a little pull to it?

Great review! Just to be clear, the lowest setting is 165 degrees? Im looking to get the same one, was just wondering if it would be possible to make jerky.
SupraStringing11b Yes you can do jerky in it. Lowest setting is very low, like 100*. Not sure exactly, but I have started mine way low before for bologna and eased it up over a 14 hour cook. There is a link to it in the description too.
excellent review. I have a 30" MB electric and just did a 16 hr pulled pork butt for all my friends 3 days ago.. I apparently need to open a restaurant now..... It's all about how you use the tools you have. Currently we have a 7lb whole chicken, seasoned, with apple chips in, and will add 6 ears of fresh corn on the cob within 2hrs of completion... note: if you're in this to get the best outcome, you better devote some time to ensuring it comes out that way. The end results always = the amount of effort put in.

Great review. I just got a really good deal one of the Bluetooth models. It was less than the regular digital model, so i jumped on it. Seeing that this review is over a year old now I was wondering if you've had any problems with your unit?
+Bagster 78 No. No issues at all! I have several smokers and keep them inside the garage so they don't get the typical weather related issues. That's a great question though. Anyone can love their unit when it's new. After a year, it's still my "Go To" smoker for sausage, Bologna, and jerky.

Do the electronics on this unit allow you to set multiple temp/time settings? For example, I read somewhere that when cooking snack sticks it is best to cook them for an hour at 140 then another hour at 160 and then finished them off. Might be off on time/temp numbers but hopefully you get my drift.
Yes and no. You can turn up the temp (or down) whenever you like but it won't let you "program" it to do it automatically.

hankwhitley No not at all,. but you have to be careful when smoking food. You can over smoke it and especially in an enclsoed environment like one of these smokers. Meat takes smoke easily. Some protiens more than others. Also too heavy a smoke for too long can leave a bitter after taste. I advise all new smokers to take it easy. Less is more, then work your way up as needed. Don't stuff that chip hopper each time, you don't need too.
Thanks for touching on keeping that glass clean. I just picked up one of these for my Father-in-law and I wanted to know about that. Question: What chips do you use? That loos like a bag of "Western" brand apple chips in this case. Those are semi-coarse as opposed to the "Smokehouse" brand that are pretty fine. Looks like what you are using is working well though. Any thoughts on chip selection? Thank you, Sir!
+Steve Baker I have had good luck with all the chips I've used. Have not really paid attention to brand and even dropped saw dust/chain saw chips in it and pellets. (Although I think the standards chips worked the best overall) It's an addictive hobby for sure haha. Merry Christmas!

+halo27legend Thanks for the suggestion! I might do that. I have found that on higher temp cooks you get a lot of moisture condensing on the inside that loosens everything up. Wiping it off with an old towel when you open the door gets the glass amazingly clean. I see if I can't get that done.

Still have it and still use it. I've had no trouble with it at all. It lives in my garage under cover when not in use and I use it mostly for sausage, jerky and smoked fish.

Scott they sent a CD with the smoker, but it doesnt work. The CD, to smoke a pork but and a brisket should I use one rack or two, they will fit on one. any quick info would be great, how many time do you fill with wood chips during one smoke and do you empty ash after every use or every time you add. I'm new so no making fun of...

Scott Taulker Yes it has a water pan, and no I never soak chips. THat's just a myth and best avoided. Water will not smoke. Smoke comes from lack of air.

i have used gas and charcoal smokers a lot. i just bought the masterbuilt 40" electric because i wanted to stop the cycle of constant monitoring the smoker. I did my first smoke last night it was a rump roast. It got brown but no amount of char or crust on the meat after 5hrs at 225. is there any suggestions you have before i try it again to get a bit of char on the meat during the during the smoke? would it help to run it at 275 for the first hour to help get the char. thanks
THat'sa good question. One of the down sides of electric is it is harder to build up a bark. I would try it hotter. I frequently smoke on the solid fuel rigs at 275* or even more. it works out fine. (BTW, So does Myron Mixon!) :-)

I have the older version of this electric smoker. I purchased it from Masterbuilt I liked it but the electronics went out after it was 9 months old. I had to buy another Electronics module. The second module lasted 6 months and stopped working. I tried to order another module and found they don't make them any more. I did not learn this until after it was back ordered for almost four months. The new version of this smoker has the electronic display in the front, mine is in the back. Masterbuilt's warrenty really sucks.

My masterbuilt smoker broke. Heating element went out. I've probably smoked 30 to 40 times on it. Hopefully I can get the part shipped.

Do you have to refill the wood chips during a look-cook brisket smoke? Or could you go to sleep?
You'll need to add the cold smoker attachment to not have to refill the chip tray or use on of the other devices like the wedgie. I would not go to sleep on a long anyway. My buddy and I have this same smoker and it smoked good the first handful of times, now it only smokes the first time it gets up to temperature and hardly smokes at all after that.. My buddies does the same thing. We have both checked the burners and wood chip pan for any buildup and there is none. I would highly recommend using a smoker that has an external smoke box so you can smoke at any temperature and even do a cold smoke.. Mine doesn't even smoke anymore unless its over 200 degrees and its not even that old
Something is probably wrong. You should contact Masterbuilt and let them make it right. Mine works GREAT!
How easy is it adding wood chips inside a hot unit or should I buy the one where you add chips from outside ?

Do you use the damper on the side to release smoke and to circulate air? When do you know when to open or close it?
I've found ti best to always have it wide open. Keeps the smoke from getting "stale"
I love my masterbuilt if you want a good tip for long cooks like brisket and pork butts set the smoker to 200 degrees first 2 to 3 hours. Love the cook. keep smoking t&t bbq

Can this smoker be safely stored outside with a grill cover, on a deck, under an overhang? I really want this thing but don't have a ton of storage space in my townhouse
+Paul Summers Yes, people do that all the time. The better you can cover it, the better off you'll be. I've had mine rained on while smoking and it didn't hurt it.

+Paul Summers Yes, and I like the glass. It is easy to keep clean by just wiping with a rag while it has condensation on the inside from cooking. That's all it takes. In fact, there is a bologna going into it sometime this week. :-)

I have it, but have not used it yet. Should work well. For serious smoking, the air'flow and temps are a bit uneven. I guess that is the difference between a $400 unit and a $1200 one. Works good for the $ and I am going to be doing Bologna in mine again tomorrow.

Mike Revelle at my house probably 50' or so. I actually don't use it much anymore. The machine is stable enough that I just don't really need it. It's a neat little gizmo though.

the wood chip trey how much do it hold and how many hours of smoke do you get with that amount?
Ken Brown Does not hold much. Probably about a cup. You get about 45 minutes to an hour of smoke tops. You can add a cold smoking acessory to it for about 8 hours of smoke, but you really don't need it unless you are doing cold smoking. Personally I think about every house is a good time to check on your stuff anyway, and then add chips.
i have a question. i just bought this smoker last week and just started smoking. when i set the temperature at 225 while smoking if it reaches over 230 or so the hesting light cuts off and cuts back on around 225 degrees. is this suppose to do this

Yes, Your oven in the house will do the same thing. It's working on an "Average" temperature as the element cycles on/off. Some may run a little hotter or cooler than others. It's very normal.

How do you figure out when to add water to the tray or not? Do you always use the water in the smoker?
I never add water to the tray. I foil the drip tray for easier clean up but have not found the need for water at all. In the closed environment of the smoker, there is no drying out. In fact when you are trying to dry out stuff like jerky, You'll need to open the door sometimes to let moisture out!

I have two questions:
How hard is it to clean this / does it make a mess in the smoker when using?
Can I keep this on the patio during the summer? Will rain cause any damage to it if left out uncovered?
I ask the first question because someone tried to sell me one for $80. However the thing was filthy and smelled like they owned it for 5 years and never cleaned it. I had to pass after the opened the door on it, however I'm still interested in buying one (was eyeing one today at Home Depot).
+Andre Outlaw I just wipe mine down when I'm done. If you don't leave fat drippings in the bottom, it will never stink. It will however get that great smokey "Seasoning" smell. That's good! +Andre Outlaw Be careful, haha, I ended up with 5 cookers (so far) From cheap gasser I converted to a really good charcoal grill (With Grill Grates of course), a Royal Tailgater pellet grill, The MES40. My Modified Chargriller Pro is really good smoker for charcoal and sticks, and the Weber Genesis on the deck. Best of luck!
Have you ever tried the A-Maze-N smoker tray to get more time out of your smoke
I'm using a Wedgie now. In fact I like the wedgie with pellets from bbqpelletsonline.com BETTER than the chips anyway! I get 3 hours of smoke from one load and that's more than enough. I even use it on my gasser for a little "Kiss" of smoke there. I don't have anything that I really want more than 3 hours of electric smoker smoke to cook anyway as I've found that this thing is sealed so well and the smoke so dense that you can over smoke just about anything in it if you are not careful. Pellets are a lot milder and richer than chips in my opinion.

Slow Smoking a bird will tend to make the skin rubbery. Cook it hotter (all the way up). Chicken does not need much smoke. You might even cook it skin down near the bottom rack

Hey, any thoughts on soaking the wood chips?
Yes, DON'T! Water does not smoke. It will steam away and then the chips burn up just as fast. Water does not absorb wood very well. (Rember they used to make BOATS out of wood!) Once the outer fibers well up, not more water comes in. To get smoke, you are starving them from air which this machine does well. on a regular grill, or smoker you are better off using a foil pack sealed tight with chips in it and one or two small holes. This starves them for air and they smolder and smoke very well.

Great video; thanks. I have had my 40" for almost two years; same model. No real problems with it. I have smoked everything in it, but I have ended up using it as an oven to put smoke on items (and that is good). Try heating pizza on it; awesome! Ask me how I did it. I did hard eggs on it with no ice and they were great. I keep mine in a garage like you do, but if you don't you may get the problems idahodeerhunter got (moisture on electronics). Check his videos out (very well informed) because after two years mine is starting to not getting up to temp and I think I'm having a problem with the element.

SillyDogGaming Yes. I have used pellets before and it works fine in mine. I don't put to many in at a time, maybe 1/4 cup at a time. Just personal preference really. I don't know if they would flare up or not if you put in more but that produces plenty of rich smoke.

Chuck Filyaw Yes. I still use this and mostly for big hanging sausages like bologna or Summer Sausage, some big batches of snack sticks etc. If I can find a pellet grill that does the same thing at low temps though...

what is the benefit of the glass door if the smoke doesnt allow you to see the meat?
The Smoke Cycles. Sometimes it's heavy, sometimes light and in between stoking it you can see fine. I find that a quick wipe with an old towel when condensation develops keeps it very clean without scrubbing at all. I love the window.
They do a great job for those not wanting the hassle of charcoal. But for Something I want a real smoke, lump Charcoal is the only way to go. I have wore out 3 masterbuilt's and we are ready to replace the Acorn with another.

I just upgraded my MES to the new 40" Bluetooth Sportman Elite.. waiting for it to be delivered. Also.. while it ultimately coems down to personal personal preference.. the "experts" will tell you that you dont want "fall off the bone" ribs. Thats a sign of over cooked ribs. You want a rib rack that is pliable, but doesnt tear about from being so flimsy. They will tell you to do the tongs test. You should be able to pick up a rack of cooked ribs with tongs and they should slump over, but not fall apart. Nice video none the less.
Nicholas Johnston I know, I'm not a fall off the bone guy either (because I am an expert haha) But most people like them overcooked unfortunately. They don't know any better. This was the first time I made them on this smoker too. Not bad. Still prefer solid fuel for "Real" BBQ but this thing rocks for sausage, bologna and jerky!

this smoker will smoke things as good as any charcoal or wood based smoker. Great review besides that biased opinion in the beginning.
+halo27legend Thanks, (I think haha) I'm not sure how it could be biased though if I spent my $ on all of my cookers. Certainly the electric is better for some things due to ease of operation, but for a seasoned smoker it's really hard to beat a solid fuel unit especially on certain proteins. The winner of "PitMasters" last season used a Pellet grill! For me personally, I use the electric on snack sticks and sausage things, bologna and fish (Although the uneven heat distribution inside the unit is starting to drive me nuts) My pellet grill/smoker for all things chicken and sometimes brisket flats due to ease of operation. then my COS charcoal/wood cooker for all things pork.
