      Super markets can and do get good meat, your local butcher can too, where your suppliers get their meat from, the slaughter houses matter more. Buddy of mine was a butcher, we’d eat certain Kobe and waygu raw. his boss would let him keep scraps because there is no way we could have been able to afford that beef any other way and it was a VERY high end butcher for a select few kitchens that the owner was partnered with.
      They also made a incredible pastrami on rye, in the deli, in house made bread, in house made pastrami, hand ground mustard and in house sauerkraut too.
      Top 5 best sandwiches of my life, got asked by the owner if I liked it, had no clue who I was talking to lol. Turns out he rarely showed up and out of everyone he asks some rando in the deli eating a sandwich in the half hidden deli part about the meal rather than any of the dozen tables in the white table cloth section.

      I know of a popular butcher near me that was cutting their meat in an unrefrigerated cut room, butcher shops aren't just magically more food safe, you have to assess their food safety for yourself while shopping there.

I remember it so clearly, it was dark, and the street lights were working but the one near the alley we were in had been shattered a few days prior, so we were hidden well in the alley we waited in. Bro kept saying "oh imma kill this nigga" and I just kept going "yeah, he got it comin tho" and he was getting a few practice swings in with his aluminium bat while I just gripped the copper pipe I was holding, trying to balance its weight correctly in my hands to get the harshest hit possible, and we just weren't thinking, you could say we were blinded by rage but that wasn't it: we were excited We'd done things like this before, and I guess when you're young, life seems so endless, you just don't really consider that these things have consequences, that you can just take a man's life, and he can never have it back, that person is gone forever now, because of you. I was squinting, trying to check out a chick across the road when Bro went "That's him! Let's go", and when I turned my head I saw the dude just walking casually out of the bar with two other guys, clearly drunk, and when they got in front of the alley I just swung, didn't even look him in the eye. He fell. He just fell. Two other dudes booked it, Bro started chasing after them with the bat but I just stood there, stared at the dude on the ground, just surprised he went down so quick. He had a big gash on the front left of his head, a crack going down from the start of his hairline almost to his eye, and lood was pouring out onto the ground and I just booked it, ran right back home, threw the crowbar in a random curbed trashcan on the way, and showered for probably two hours, until the water was running ice cold. Bro and I never talked about it again, but there was shit about the guy I killed in the News the next day, people were saying it was a gang related and I was in College at the time getting solid grades and I was never associated with gangs so nobody questioned me, I just got off scott free. So did Bro. Sometimes I wonder, would the guy have made it if I just stuck around and called an ambulance? Or was he doomef the moment I decided to swing? Would my life really be that much worse if I admitted to it? Most nights I can't sleep, I broke up with my girlfriend soon after that and never dated anyone since, I live alone, I'm paranoid and I stopped talking to all my friends years ago, even the ones that still try to reach out sometimes. When I dropped out of college, nobody wondered why, I got a janitor job around that time and once I'd made enough money I got the fuck out of Chicago. And still, every time I see a street lamp that's out, or even just flickering, I pray to God that somebody would do the same to me, put me out of my misery, but that's not what I deserve, is it? No, I took a man's life, blood is on my hands, but also still running through my veins. I am tainted, but I am cursed to live on, feel the pain he never got to feel because I took it from him, experience the world through tortured eyes and burn myself with every breathe, with every step I take on this path of burning brimstone. I don't believe I'll go to Hell after I die. I'm already there. And I deserve every moment of it.

      Well, that's kinda how the tatar steak works, in a good restaurant, they bring you the meat and the spices seperately and you prepare it yourself

      They're just eggs that come from chickens that have been fed with nutrients mixed with additives. It's not the sign of good quality eggs it once was.

      @@laken1804 What I'm saying is that, egg yolk colour is determined by the food they eat.
      Good quality feed used to produce a good coloured egg yolk and indicated a healthy chicken.
      Unfortunately, egg producers learned that they were being judged on the colour of their yolk and started introducing additives to chicken feed. So much so that you can't looks at an egg yolk any more and determine anything.
      What I can say though is that eggs don't come in the colour served in this meal without serious additives.

    I make my own steak tartare I love using soy sauce and wasabi instead of horseradish, I keep the Shallots, salt pepper, yolk, olive oil and lime. so good. I eat it by itself too,

    I’m making mine with minced beef (duuh) gherkins, paprika, ketchup, mustard, salt, pepper, diced onion, butter, egg yolk, and I’m having it on toast. This is the way I ate it growing up, I’ve never had Sam’s version.

    Yes this is perfectly safe to eat, just stick to few rules:
    Make sure the meat is fresh, the fresher the better.
    Don't buy from places that you can't fully trust (street markets)
    Check the meat carefully both before and after chopping

    People saying this is gross are simply uncultured swines, this is the top way of enjoying quality beef besides carpaccio.
    For me I like it unmixed with some chanterelles, shallots, dijon mustard, parmesan chips on the side. Beef mixed with soy sauce and nice orange/red egg yolk on it. A shot of vodka to wash it down.
    Eat some every week and never got sick, because it's literally many times safer than eating at your local fried chicken when done right.

    I often make it just for myself. Such an easy dish. I always have mine on toast, though, and I don’t mix in stuff with the meat. I have it with kapers, diced onion, a raw egg yolk, and salt and pepper. All you need, except a good pile of meat. Might just have it today 😋
