People are there for AGES and don't have your level of pronunciation and vocabulary. Your accent is virtually spot on. Your openness and mannerisms to the culture/people is also very respectful.

If you can find a place that serves jeow padek, it is umami goodness! A piece of padek (hopefully it’s a carp) wrapped in a pillow tin foil or banana leaf, roasted over hot charcoal along with another pillow tin foil or banana leaf with garlic, shallots, onion, galangal, and peppers wrapped inside. Then it is all smashed or pounded in a mortar and pestle and served on the side with grilled meat, steamed veggies, and sticky rice. If you have the tolerance for padek it’s scrumptious! Dried buffalo skin is prepare by grilling/charring, then cut to small bits, clean in water, drain, then stew with bamboo & wild mushroom, add other ingredients and seasoning with Pla ra, bit of MSG to taste, fish sauce, top off with lemony basil. Delicious with sticky rice.

love your videos, thus far... at 8:46, when it comes to buffalo skin, what they do is toss them into a hit red charcoal and than wait for a few minutes and bring them out and smatching the burned residue than just cut them up and eat them with beer or alcohol. just in case someone already shared with you of how to prepared buffalo skin. at 10:04, those are leather back turtles... at 10:58 the lady said it was fish eggs. at 11:12, those are pa thong, which are banana leave fish, typically they are made into fish laap. at 24:15 those shaved coconut is then soak in a quick water then sqeeched into coconut milk than is added into cooking.
