How to Make Cranberry Sauce

  • Using fresh cranberries! Learn how to make this Thanksgiving staple! This recipe is stupid simple (did I say that already? ;-) ) and better than the canned gel stuff you get in a can at Thanksgiving. Something I noticed, none of the recipes out there that I saw said to skim the foam...I did and it really helped to get the bitter bite out of the cranberries. I tasted the foam out of curiosity and it was disgusting. SKIM your sauce!!
    What you'll need:
    1 (12oz) pkg fresh cranberries
    1 cup orange juice
    1/2 cup white sugar
    1/2 cup brown sugar
    In a large colander, rinse the cranberries well and pick out any berries that are damaged or broken. Place drained cranberries into a large sauce pan. Add orange juice and sugars and heat on high until just to a boil, stirring often. When boiling, turn heat down to medium and cook 10 minutes, stirring often to prevent sticking and burning of sugars. Let cool in the saucepan and transfer to a bowl to serve or refrigerate. Makes 2-1/2 cups of sauce. Enjoy!

    I doubled the amount of cranberries and orange juice but kept the proportions of sugar the same as in the recipe so it wouldn't be as sweet and it turned out amazing! Thanks for the simple recipe!

    I've never made it with just sugar and water but if you can add more flavor, why not?! And not sure what they do with the canned stuff but I've never been a fan of cranberry sauce until I had it like this. Absolutely delicious made from fresh cranberries!

    Great clip. I grew up w/ fresh MA cranberry sauce on Thanksgiving. Like you said once you try the real deal it's tough to eat the fake canned stuff.

    I do this but add in some ground clove, cinnamon, and one small can of pineapple juice. The pineapple juice really makes it smooth and exotic.

    I saw a few recipes that subbed half the sugar for brown sugar so thought, why not?! It actually gives it a nice subtle flavor difference.

    Found the perfect recipe my man loves (and will eat)He is soo picky when it comes to food and i am excited about making this w/ our christmas dinner on Sunday. Happy Holidays to you. Oh, Im going to tweek it a lil w/ 1/2 cp. orange juice and 1/2 cp. cranberrie juice.

    I just made this along side 2 other recipes to compare and I found it too sweet. Used minute maid orange juice which has piles of sugar in it already which threw off the balance for me. The proportions are right in line with other recipes I've made (1x 12oz/340g package of cranberries, 1 cup of liquid, 1 cup of sugar) but the OJ already has sugar added so I'd recommend dialing back the sugar added if using juice. Alternatively, use water instead and zest an orange or lemon. Final thought, I pour my boiling mixture directly into small canning / pickling jars and seal immediately then invert. The scalding mixture acts like your canning and it seals as it cools. It is shelf stable and can last for many months if you don't eat it first! If you're really worried, drop the sealed jars in boiling water as you would during normal canning and they will last indefinitely although it tastes best shortly after its made. Thanks for sharing!

    That foam, if you taste it, is not pleasant at all. I assume it's the same as with strawberry jam in that it's the impurities in the fruit cooking out. It definitely helps to take that bitter bite away! I've never made it with just sugar and water but made like this, it isn't bitter at all. Kind of a tang to it but it's a pleasant tang.

    Add a little bit of baking soda (not baking powder) at the very end of cooking it and it will neutralize some of the bitter flavor if you like sweet cranberry sauce. Leave it in the fridge overnight and it works even better. Be aware that it will fizz!

    Spot on. Not related to this sauce, but when you are skimming anything, you might want to do this,,,,,,have a bowl/cup with water to put the froth into. When you dip your ladle of froth into the cup.....when you pull the ladle out of the water, the froth stays in the water and you start skimming again with a clean ladle. I changed water one time when I was skimming because I wanted the berries to be very pretty and I think any remaining white is not attractive.     I'm still making boxes for mine but otherwise they are done. Yippee!! And I probably will make more peppermint bark this year. Got ALL kinds of baking to do between Thanksgiving and Christmas and who only knows who's going to eat it all!! ;-)

    i love cranberry sauce. I normally do not eat sugar but Thanksgiving is just not right without cranberry sauce.

    At first when I made it I used orange juice like the recipe calls for. But I rather use water, white sugar and cranberries. To me it has a better flavor because it has a pure cranberry flavor.

    Hi will you use the same recipe for strawberry sauce? I have made your strawberry jam a few times and i love it... SO now i need strawberry sauce for a baked cheese cake... do you suggest i used the strawberry jam recipe and just dont leave it on as long as making jam or do i use this recipe with strawberries?

      You can use water as well. For a bit more flavor, add the juice of one lemon (and some zest if you wish).

    I grew up with the canned shaped cranberry jello:) I was at Sam's Club today and saw peppermint bark and I so thought of you. Are you making it again this year....I will so buy some if you are planning on making it? My ornaments are DONE...wrapped and labeled. Shipping them at beginning of next week...woo hoo.
