If it’s grass fed and finished, and you can sanitize the outside of the steak (or verify that it was never contaminated) then steak is very safe to eat raw, and doesn’t taste all that different from the raw tuna in sushi. I’m from Texas and I’m on the carnivore diet, and I ate my first raw steak during the Texas freeze when our power went out. It’s probably as delicious as you imagine it to be, I’d say go for it.
