1:20 That is a classic tuning exercise for chorus, orchestra, and band. Create dissonance (everyone move to a very random sound) and then move back to the root upon the director's signal. It trains the ear to hear the collective harmony better.

This is actually a technique my high school band would commonly use for tuning. We would play a chord as a baseline, then all play a random note to disrupt our ears. Then we would return to the original chord in an effort to land it in tune. It created a very jarring but also very cool effect when done properly

edit: since this generic comment got to the top instead of insight on the choir practice, i'll share what a person named delphic464 said in another comment: this is actually a common tuning exercise where they create dissonance and then move back to the initial note on the conductor's cue. they use it to train their ears to hear the harmony as a whole better.
