In example two, since BE splits down the 90º, couldn't you just take half of 90º from the first step? I guess what I'm asking is, is it okay to assume that BE splits exactly at the middle of square BCDE?
In this case yes but only because it is a square, if it were a rectangle it might not work. Don't ever assume you can split an angle in half unless, you can prove it or it is given.
If you draw a line through an angle it isn't divided in half. It is divided into two parts but they don't have to be equal. One angle can be 30 and the other 60, and the both add to 90.

Isn't it easier to divide the 90 degrees in the square by 2? I guess it's going beyond triangles, but it's so much easier
