Unstuffed Stuffing Cakes

- Ingredients
2 cups self rising corn meal (if you use plain corn meal, add 2 teaspoons baking powder and 1/2 teaspoon salt.
2 leeks or 1 onion
2 sticks of celery
1/2 red bell pepper
4 or 5 leaves fresh sage (about 1 tablespoon when snipped small) or 1 tablespoon rubbed sage
1 teaspoon dried parsley
1 teaspoon dried thyme
NOTE: You may substitute 2 teaspoons poultry seasoning for the herbs and spices
2 eggs
1/2 cup broth plus enough to hold all ingredients together into a stiff batter
Juice of 1 orange -- about an ounce. Хобби

I think these would be delicious with a holiday meal as an alternative to traditional dressing/stuffing. They really look delicious.
I kept thinking that they would be perfect with turkey a la king leftovers, too.

Dtuffing cakes look very good. I wonder if you can make corn bread with cornmeal and carbquick and even if it would less carb that way. I mean the round cornbread in the pan.
You know, I actually thought about that. The consistency is not that different than CarbQuick fry bread. Next time I will try it.
