- CHIANG MAI, THAILAND - Looking for the best khao soi in Chiang Mai? Well, I think this bowl of khao soi noodles recipe might be the best in the whole of Thailand, not just Chiang Mai. That is right, the best khao soi in Thailand. They are worth travelling for, trust me. You do not want to miss this bowl of noodles in Chiang Mai. Khao soi is a coconut curry noodle soup which comes from Northern Thailand, Myanmar, and Laos. It consists of noodles in a thick, rich coconut broth, and usually chicken or beef. It was voted the best soup dish in the world. This place is in the Doi Pui Hmong Village which is just beyond the famous Wat Phra That Doi Suthep. If you carry on up the hill and into the Hmong village, you will find it. There is also a stunning viewpoint above the village called the Doi Pui Viewpoint.
Khao soi is a fragrant and flavorful noodle dish that originates from the northern region of Thailand, specifically Chiang Mai. This dish is a unique combination of influences from Thai, Chinese, and Burmese cuisine, resulting in a delicious and complex flavor profile.
At its core, khao soi is a coconut curry soup that is typically made with chicken or beef as the main protein. The soup is flavored with a variety of spices, including turmeric, cumin, and coriander, and is often garnished with fresh herbs and crunchy noodles.
What really sets khao soi apart, however, is the addition of crispy egg noodles on top of the soup. These noodles provide a satisfying crunch that contrasts perfectly with the rich and creamy soup. In addition to the crispy noodles, khao soi is often served with pickled mustard greens, lime wedges, and sliced shallots, which add even more depth of flavour to the dish.
Although khao soi is now a popular dish throughout Thailand and beyond, its origins can be traced back to the mid-19th century when Chinese immigrants began settling in Chiang Mai. These immigrants brought with them a dish called "khanom chin nam ngiao," which was a soup made with fermented rice noodles and a tomato-based broth. Over time, this dish evolved to include more traditional Thai flavours and ingredients, resulting in the khao soi we know and love today.

You find chopsticks along for noodles and soups! Sometimes you get spoon and fork. But yeah you need to go and eat this one it’s so good
Nearly everything except for noodles is eaten with a spoon and fork (never put the fork in your mouth) in Thailand. Chopsticks are saved for noodles.

haha yes, I can eat spicy. Thai shop owners are surprised sometimes, especially when I add more at the table haha
Khao soi should only ever be chicken or beef. In some restaurants you can get pork or prawns or vegetarian khao soi but they are just not right. Apart from anything else khao soi is originally a Muslim dish from a landlocked region so pork just feels wrong and seafood just feels strange.
Totally, I understand that. Although I’m never against experimenting, as long as the original form still exists

I have always wonder what the original authentic Khao Soi Meat is supposed to be, is it supposed to have been Chicken and if so how did Beef get into the picture, and why not other meat like Pork or Duck, seafood like Ghoon Prawns?
If you get Khao Soi outside of Thailand in the USA or Canada its always Chicken and nothing else, pricey, but delicious.
haha you can definitely go down a rabbit hole if you start to look at how it originated, Thailand, Myanmar and Laos all stake their claim
re: chopstick you gotta put your middle finger in between the sticks. think about simple physics of mechanism. once you find the balance you should be able to pick up peanuts and beans by chopsticks
I can do that, just not with metal or plastic ones. Wooden ones and I’m on single grains of rice
@@hungrytoexplore you gotta support it between the sticks then no matter what materials it should work just fine. Practise a few more times with wooden one then easier with vendors plastic one. NB, i personally prefer wooden one but in resto, plastic/metal ones seem more hygenic and ease to be cleaned afterwards. Chopsticks have to be replaced by new one on a regular basis

If you see chicken dish in Thailand and the chicken looks kind of small and scrawny, then you know the chicken is going to taste fantastic because it would be local breed free range chicken. If the chicken looks big and plump like in the West, then it's industrial scale fast grow chicken with little flavour.
