    ✅Ingredients
    PICKLED RED ONIONS:
    • 1 red onion
    • 1½ cups white vinegar
    • 2 tablespoons sugar
    • 1 tablespoon salt
    OPTIONAL FLAVORINGS (Pick one or mix and match):
    • 1/2 teaspoon whole black peppercorns
    • 1 teaspoon whole allspice berries
    • 2 sprigs fresh rosemary
    • 2 sprigs fresh thyme
    • 1 small hot red pepper
    • 3 whole peeled garlic
    • 1 teaspoons whole cumin seeds
    ✅Instructions
    00:02:01 - Black peppercorn pickled red onions variation
    00:02:15 - Thyme pickled red onions variation
    00:02:37 - Cumin garlic habanero pickled red onions variation
    00:03:04 - Rosemary garlic pickled red onion variation
    00:03:30 - Allspice pickled red onion variation
    1️⃣ 00:01:03 - Peel and slice red onion into thin slices. Place into a pint sized mason jar, or other glass, plastic, or ceramic container with a sealable lid.
    2️⃣ 00:00:34 - In a small saucepan stir together vinegar, sugar, and salt. Add in 1 or more additional optional flavorings as desired. Bring to a boil, then remove from heat.
    3️⃣ 00:01:19 - Pour mixture over onions in jar until full. Place the lid on and let cool to room temperature.
    4️⃣ 00:01:29 - Place the lid on to seal and refrigerate.

    These are so amazing on a pizza!!! Tonight I'm making guacamole steak tostadas with them.
    Ingredients:
    Sour cream of choice
    Cheese of choice
    Onions
    Jalapeno
    Tomato
    Cilantro
    Avocado
    Lime juice
    Jalapenos
    Steak (thin and lean is best)
    Premade tostadas
    1:. Apply thin layer sour cream (or Mexican cream or Greek yogurt mixed with a pinch of salt and splash of lemon or lime juice) or any variations
    2: thin to med layer of cheese. If that's not enough add to top layer.
    3: microwave cheesed and creamed tostadas maybe 30 secs or so till cheese starts melting.
    4: add onions, cooked steak, guacamole, and extra cheese, salsa, or hot sauce. You may add herbs like cilantro, oregano, basil, garlic, ....
    5: enjoy!!!
    * To cook steak have thin lean cuts and cook quick quick quick on high heat or med high depending on what stove top. I have glass so it cooks way slower than gas

    Very useful and instructive. Thank you! I've put a teeny bit of pickling spices in my red onions instead of the pepper, plus thyme and tarragon. The juice, I made it with half regular white vinegar and half apple cider vinegar because I happened to be running out of both of those to reach the required quantity, tee-hee! It came out as a kitchen marvel. Thank you for your inspiration.

    I did mine with half water n half vinegar with some sugar bring it to a boil n fill my jars. However I didn’t store mine in fridge I stored it on the counter top n it taste great.

    I used 3/4 tbsp of sugar, 1tbsp of salt, cumin powder, allspice powder, whole peppercorn, and sprigs of fresh rosemary. Combo!

    So what happens after you pour the liquid in? How long before you use them? Should you refrigerate them for a period?

      You'll have to stand at attention and see that effect for yourself, but please don't use them until they've loosened the wallpaper off the kitchen walls you swore you'd strip when you moved in. Yes, refrigerate them for at least twenty eight days every month for six to nine years. Attach humor to Mason jars and get busy. Be well.

      Until they begin to scream and cry for removal. Or attention. Once pickled, they're often too boozy to manage even a light whimper for anywhere from three to six months. No good, decent pickled onion batch lasts very long, especially if you pickle short onions. Be well.

      Ummm, I don’t use either. You can use whatever water you’d like that works best based on your location in the world and the safety of the water in your area.

      They can be kept refrigerated for 6-12 months. If you follow proper canning procedure to seal them, you could store them at room temperature for years.

      Opened, unsealed jars of pickled vegetables will stay good in the fridge
      for about 6 months. Be sure to keep your pickled vegetables in the
      refrigerator.

    i made some pickeled onions and i put some cloves and garlic in it but now after a while the onions are turning brown can you tell me why am i supposed to keep them in the fridge what would the shelf time be please

      That will happen if you use iodized salt, need to use Kosher, sea or pickling salt. Could that be it?

    In other videos those onion slices were treated with hot water first. Blanching vegetables: "Vegetables have a natural enzyme that continues to effect texture, color and flavor. Blanching stops the enzyme action".

    Why does the brine have to be hot though ? Seems like its gonna soften up the onion and boil it. Rather than have the crunch

      To dissolve everything. It doesn't soften the onion.

      Use lime juice instead. Taste better and lasts a few weeks in The fridge.

      It's impossible to know without climbing into the fridge with them for up to three weeks. Or three months. Maybe even longer! Good luck.

    Quick question...most of the videos I watch they add water to their pickling brine. You do not. Is there a reason that you don't add water?

      I would say it depends on how concentrated acetic acid in your vinegar is in the first place. If I use a regular 8% I always dilute the vinegar with water, usually 1:1 vinegar to water and thats plenty sour. But If I am using milder vinegars I generally add less water. But I always dilute. And then It depends on your tolerance of acetic acid of course. If you are ok with strong vinegar flavors, you might not want to add the water at all... One thing to remember is the stronger the acid solution is, the more tender the onions are and longer the shelf life will be. Also, if you use really hot brine the onions tend to soften up more. If you use colder brine, the outcome will be more crisp.

    Why is it most people in the US confuse 'mexican' with cumin? It's not indian food... mexican food has garlic, oregano, thyme, marjoram not raw cumin

      While cumin is a staple in Indian and Mediterranean cooking, it's also found regularly in Mexican dishes. I can understand the confusion should the pickled onions be used in one too many Gibsons before lunchtime.

      @@johnnykay7411 It's not though, and specially not used raw like in this example. You find it in adobos sometimes, maybe in bean soup and other cooked stews. Almost never in a salsa or as a regular spice. For pickled onions, almost guaranteed you would find them with oregano or thyme instead.

    I think this recipe definitely calls for water. I made this and followed 100% and it’s horrible. I love pickled onions and these were all vinegar….

      Welcome to pickles! But if you like them super mild with just a hint of vinegar, you can replace half or more of the vinegar with water.
