  • Kala Pav Bhaji
    #### Ingredients
    For the Bhaji:
    Peas: 1/4 cup
    Capsicum: 1/2 cup
    Potatoes: 3, boiled
    Tomato: 3, chopped
    Onion: 1/4 cup, chopped
    Garlic: 1 tbsp, chopped
    Butter: 1/2 cup
    Oil: 2 tsp
    Salt: 1 tsp (or to taste)
    For the Black Masala:
    Bay leaves: 2
    Fennel seeds: 1 tsp
    Black cardamom: 1
    Black peppercorns: 1 tsp
    Cloves: 1/2 tsp
    Cinnamon stick: 1 small stick
    Stone flowers: 2 pieces
    Coriander powder: 1 tbsp
    Cumin powder: 1 tsp
    Amchur powder: 1 tsp
    Dry coconut: 1/2 piece
    Coriander leaves: Handful
    #### Method
    Preparation:
    1. Boil the potatoes and peas. Chop the onion, capsicum, and tomatoes.
    Preparing the Black Masala:
    1. Take all the spices and roast them nicely until they turn slightly black.
    2. Then, add the coriander powder, cumin powder, and amchur powder, and roast for another 30 seconds. Remove from the flame and keep aside.
    3. Take the dry coconut and roast on the flame until it turns black. Cut it into pieces and keep aside.
    4. In a mixer jar, add the roasted spices and coconut and grind well into a smooth powder. The Kala Pav Bhaji Masala is now ready.
    Making the Pav Bhaji:
    1. Heat a pan and add butter and oil. Then, add chopped garlic and sauté nicely.
    2. Add the chopped onion and sauté for 2 minutes.
    3. Add the chopped tomatoes and cook until the oil separates.
    4. Add the chopped capsicum.
    5. Finally, add the boiled peas and potatoes, and mash nicely.
    6. Add 2 tablespoons of the Black Masala and water to adjust the consistency.
    7. Lastly, add salt, butter, and a handful of coriander leaves. The Bhaji is ready.
    Serving:
    Serve the Kala Pav Bhaji with Ladi Pav. Enjoy with butter, lime juice, and chopped onions.
