Still a most amazing Teacher ! Incredibly, when I went to the first class with him at 6th Street in NYC back in 1995, he was teaching on Vasubandhu's Abhidharma Kosha

Interesting talk.I like what you said about the Buddhist attitude behaving in such a way that those around you have respect for you. Also avoiding confusion by sensible reasoning e.g. the husband in the kitchen.

I'm no expert, so this is just my thoughts on the matter.
The idea of coffee meditation is to ripen the karma seed faster. The karma seed ripens based on your thoughts, so the more often you think about the good deeds that you have done, the sooner it will ripen. The reason why coffee meditation is suggested before sleeping is because as you fall asleep, the focus of your meditation, the good deeds that you have done, gets embedded into your sleeping mind, so that it will stay there as you sleep. It is almost as if you are meditating while you sleep and thus watering the seeds of your good deeds while you sleep.
So in my understanding, coffee meditation can be done at anytime, but you will get the most benefit from it just before falling asleep.
