Hello Aline, I use 1 part full cream and 3 parts white chocolate - place all in a heatproof bowl. I microwave mine for 1 minute increments, whisking in between each cycle till its nice, smooth and glossy. Leave to cool till it is the consistency of peanut butter :) Hope this helps! xx
Wow. Chip looks absolutely amazing. 😃 the highlights of colour really bring him to life. Can't believe he's cake. I don't know what part of Australia you're in, but where I am it's soooooo humid at the moment, so I use a 5:1 ratio for the White chocolate ganache. Is that alright? I find it doesn't firm up enough if is any less..
Hi Sarah, thanks for your lovely comments :) I use a 3:1 ratio during cooler months. I add in more choc when it is warmer, but I'm based in Adelaide so its only really warm during summer. It also depends very much on the type of chocolate and cream you use. Try and substitute half of your cream to "Double Cream" and it should be a bit firmer. Also try experimenting with couverture chocolate (or other brands).Fingers crossed!!! :)
its probably because there wasnt enough moisture for it to stick on the cake. I would recommend making sure the cake is tacky (not dripping) with slight moisture, then wrap the fondant (not too thick) and then immediate start pressing the fondant onto the cake. Gravity will make it feel like it wants to slide off, but if you hold it in place and press it on, it should stick as you wrap it :)

My fondant started to demolish when I put the fondant on the sides that way . What did I do wrong ?
its probably because there wasnt enough moisture for it to stick on the cake.
