This is by far the most helpful video I've found on this topic. I decided that 50 bucks worth of chocolate melts and different molds from Amazon were the way to go for Easter treats this year. I have 2 boys and they LOVE chocolate. I looked everywhere and the price of chocolate candy with children's characters is outrageous and doesnt taste good, its got zero taste. I saved a ton of money and I have delicious treats that look fancy and special with little personalizations, ill never go to the store for chocolate candy again. This video helped me tremendously. You're a great teacher and you now have a life long fan in West Virginia.

You can always add just a very small touch of corn syrup to stiffen up the chocolate if the molds tend to break too much. I have a few molds that are just tough to get the product out of. Good video!! :)
Hi! I use a ratio of 6:1 chocolate to corn syrup to help release from the mold. This amount works for both compound and real chocolate. If you want to fully make modeling chocolate, then use a ratio of 4:1 compound chocolate to corn syrup or 8:3 real chocolate to corn syrup. hope this helps 😊
@@zahr4art u mean we have to add corn syrup in chocolate??? Can we use compound with amul fresh cream ? Even according to some articles, no need to add something, just melt the chocolate and pour in ur mould.

Great video. Haven't used molding chocolate before. How long before the chocolate starts to thaw with all that warmth from the hands? What if you keep the other molds in the freezer for longer than 10 minutes, while unmolding what you have?

Try working in an ac room. Make sure the garnishes have been chilling in the fridge for a few hours before using Don’t make any garnish too thin . Try n not handle the garnishes too much as they will melt due to the warmth of your fingers

U can use compound and couverture but u need to to temper the couverture correctly before using. There are many good videos on utube. Check out callebaut chocolate videos
I’ve never done it in a mixer jar but I’m sure it’s possible Pls use the round disc And whiz zing it off n on till it thickens if u over do it , it will become butter So I would suggest that when it’s nearly done take the cream out in a bowl and whip it with a whisk until it comes to the correct consistency.

Thank you for the video. I watched both this and how to melt chocolate videos. Won’t regular chocolate melt in warm weather when on a cake.
If you make the garnishes too thin then yes in the hot weather they can melt

Should you temper the chocolate for a shinier finish & decorations that don’t soften too much on the cake?
Silicon moulds will not give a shiny finish

U can lightly grease them . Don’t keep in fridge for too long . That’s y mayb they r breaking. Gently remove them

You will have to temper it. In summer you would have to keep in cool temperature.
