LENTILS Cuban Style (Potaje de Lentejas)

Like black and red beans, lentils are a Cuban favorite. Lentils are typically served with white rice and meat, whether it is steak, ground beef, chicken or pork.
One of the characteristics that differentiate how Cubans make lentils is the fact that there is always pork meat in it, whether it is chorizo, ham, ham hock, chicharrones etc. We also use root vegetables, like potatoes some people like sweet potatoes and we also most of the time add pumpkin squash (calabaza) this is often found in the different tupes of beans we make.
