Hey Chris! Thanks for the question. I think there's still a lot more I need to explore in both countries to answer that with certainty but if I HAD TO CHOOSE one of the countries today, it would probably be Colombia. I'd love to return to Medellín and get to know it a little better! I also found Mexican cuisine to be incredibly repetitive and Colombia offers more variety in that aspect.
