    My Landlord is using the Global Knives last 25 years. I totally amazed it looks like a brand new one. he used to have a restaurant and he was the main chef. I have just bought 3 sets of 35th Anniversary Global Knives from Sweden. I know it will pass to 5 generations or further.

    I have a set of global knives and I love them. They stay sharp for a long ass time and get the job done every time

    I've worked at a hotel kitchen as a kitchen hand, and I've used many brands of knives. Global is my absolute favourite. Bought for my own use and as I'm going to apprenticeship soon to become a chef, I love these. Great for home use, great for professionals.
    And the Globals aren't that expensive -- 100-200 dollars US for a knife, depending on use.

    Not a cook but I can picture the Global being used by chefs in many restaurant kitchens. Somehow I cannot imagine the Chroma knife being so popular. 🤷‍♂️

      Actually, where I live, in belgium a lot of chefs use the Chroma knives. I think Global might be just known more all over the world than the Chroma Porsche design ones.

    I have both knives and I agree that the 301 feels better in the hand and has a more serious quality feel with the additional weight. Don't get me wrong - I love my G2 but always feel I need to be carful and be selective in its use as if I may damage it :/. Whereas with the 301 and my German knives I can chop and slice freely.

    Personal choice ...! but the global looked a lot sharper when you were cutting the onion. Just my humble opinion.

      Just a follow up (from a different account). I received the Global G-16 for Christmas and absolutely LOVE it! It is a beast! 10 inch blade makes larger items like cabbage, squashes and melons a breeze.

    Just bought the knives I needed from Chef Depot, thanks for the help, I saved $60 from what i bought have paid on Amazon, maybe even more if I didn't have Amazon Prime.

    A dimple is a dent going into the material, so it's concave. That (silly, because useless) knob on the Croma is a convex shape protruding from the material, so it is the very opposite of a dimple. The handle of the Global though, is actually covered in dimples.

    yes with global i rock in the kitschen, chroma stays with the sharpside overhead, if you grabit then !!!

    Global dad , global ! try to prepare sashimi from a pink salmon without breaking de meat .
    Global has a unique sharp side with an angle that make the difference , beside that it much more light , i mean the weigh .

    Own the Siemens Porsche Coffee machine and few other things..plus there tobacco pipes. Never bought Global knives, for one reason everyone used them and knifes would be stolen etc in a professional place. I went for Sabbatier Lion at the time ( looks like shun ) as my professional knives.

    Does the Porsche knife have a European style edge shape and angle?

      Yes, the edge is curved like a French Cooks knife but thinner.

    whats your favorite chefs knife under 200. I'm at a toss up right now between global, the mac professional, the wustof classic, and the korin susin gyutou high carbon.

    beauty is in the eye of the beholder, but I really dont like the Chroma handle and the metal dimple, such a useless feature

      Robin Chen looks horrible to me too, that stud would likely dig into your finger after awhile. It also looked like he had to use much greater force when cutting compared to the global knife meaning either the global is sharper or the chroma is a poorer design.

      Especially given it's a knob, not a dimple. A dimple is a groove, there are a lot of them on the Global's handle. But you're right, the Chroma is ugly and that knob even makes it unpractical.

    You seem to perform excellently on both, although you did seem to have an easier time with the chroma. One thing I did notice is that , from the sounds at least, it seems like the chroma was hitting the cutting board harder(maybe because of the weight). Do you find that this affects edge retention or both have about the same?

      chefgiovanni I bought them for that reason, and I'm really impressed by them, they're vastly superior to the Henckels I had been using. I bought the 5 set, but am going to add on the serrated bread knife and steak knives soon.

      Do you know how to clean the wood block? It has a screw and I turn and remove the handle but the long bolt doesn't seem to come out?

    I don't get the point of lifetime warranty, I went and checked just recently because one of my globals has a pretty big chip in it, granted its about 20 years old lol. but still.. and website basically says it doesn't cover jackshit, I mean do they need to snap in half cutting a tomato or something? it sucks because the chip is further down and its one of my chefs knives

    The out of the box edges on the Chroma 301s is fuckin' sick. It's softer steel than the globals. Globals can be hard to sharpen if you're not very experienced.

    The Porche due to the handle shape can stand on the surface with the blade up very dangerous i have a set of porche steak knives and ditched them befor an accident as a lot of the time the sharp blade was facing upwards be careful

      Good point, however, most knives can stand on the backs. Handle knives carefully.

    It seems to me that the global was the sharper knife especially cutting the carrots which was a bit unfair test. The global had a much thicker carrot to deal with but still it looked sharper. You may have decided based on the handle style instead of the performance.. The globals are not designed to be pushed but pulled. They are better suited for Japanese styled knives. The Western styled global knives I have tried are not good for the rocking or pushing motion. I do own a deba and a yaganiba from Global which I like but I admit they are not the sharpest from my collection of Japanese knives.

    I personally don't like globals. They feel weird. The handle is strange. Not my cup of tea but they are easy to sharpen. I prefer. Misono or shun.

      Tomas O. I agree to a point, I like global knives but the thin edge where it should have a bolster really digs into your hand after awhile. Shuns are great knives but also vastly more expensive. I also like Scanpan, their Classic line of knives, the name doesn't scream quality but they are a very good quality German brand at a reasonable cost. Fairly heavy knives compared to Shun or Global but you soon get used to the weight, they are very sharp and have very comfortable handles.

    After wasting way too much money on what I THOUGHT were very high quality knives made (I thought) in Germany, I quickly discovered the Henkels brand knives I gad purchased, (made POORLY in Spain🙄) absolutely would not keep an edge beyond one night’s veggie prep for stir fry. The knives literally had to be honed each use. In addition, even though the knives have always been hand washed and dried, I began to see rust spots on these knives. I cannot imagine how this is even possible, as I live in a dry, non humid climate. So.. whatever is going on with these ridiculously overpriced garbage knives, I have no idea, but they certainly have been a disappointment. I decided to seek out a nice quality Japanese knife, and after some homework, decided to start with Global G-5. Hopefully this new knife will make food prep a lot more enjoyable, as well as much safer.

      Yes, there are lots of copies and knock off out there, especially on AMAZONZ and EBAYZ. Likely not made in Japan by Global.

    It doesn't bother me but for the sake of your expensive knifes you should roll the knife when you are diceing not hit the chopping board because you can damage the blade then you will have to pay another 120 quid for a new one

      First, thanks for watching and the comments. But How wrong you are on the knife damage. These knives are made of Super Alloy Steel with very high Rockwell Hardness, they are made to be used for chopping and dicing. But, ONLY on hardwood cutting boards. After heavy use we use the correct Japanese sharpening stones to maintain. They are not expensive, but relative price for the quality. Watch a few more of our videos, you keep learning.

      @@chefgiovanni - you don't see the out-of-focus of your video? Really! You have to be sure the subject is in the "sweet spot" or it autofocuses on your whatever it sees best. You can also turn off autofocus if you have the camera on a tripod at a fixed distance.

      Both use comparably soft steels (56 to 58 HRC), no problem with brittleness.

      The global is ligher and more nimble, better suited for smaller more delicate applications like fish where little pressure and maximum cutting feel is needed where as the other is much more robust which i'd use to quarter a chicken or separate pork ribs.

    "For the ladies" .....Yeah, that's not off putting... AT ALL.🙄Just get a shun or a knife made of super blue steel. Or any knife and water stones so u can sharpen any halfway decent knife to a good edge.

    Sorry; the fact that you work left handed, though very expertly,, makes it hard for me to follow. My oldest son is left handed and even he is difficult to watch doing things like simple hand writing and note taking.
