The measurement was done incorrectly. I believe you should have measured the distance between the two columns of water, rather than the difference from the static position. Plus of course you were measuring static pressure generated by the hair dryer rather than velocity.
Thank you for posting this video, I used your formula to calculate the wind speed in my wind tunnel, the height I got is around 10mm and water density is 1.20, the wind speed calculated was 12.7m/s, do you think this is a reasonable number or its wrong? I seems quit high to me I was expecting something around 5m/s
Since you used a closed cap on the dryer you ended up measuring the static pressure of the blower but your calculation of the velocity of the stream was bogus since the velocity was of course zero. Please look at any blower curve to understand your error and refer to a pitot tube setup for the proper method.

Hmm. I made an oil extractor that can create -0.95 bar vacuum. We are a bit different level with your hair dryer.
