Easy Red Velvet Tres Leches Cake with Cream Cheese Whipped Cream!

- In today’s video I am sharing my Red Velvet Tres Leches Cake Reacipe! This recipe is so easy to make and perfect for Valentine’s Day! It’s a really fun spin on the original recipe and my family loved it! The homemade Cream Cheese Whipped Cream is really what made this cake extra Special!
Like I said in the video I am considering adding chocolate chips to the cake or maybe a chocolate drizzle next time because we thought it maybe would be even better with a touch more chocolate! But it truly was delicious as is, so I hope you try it out!

Red Velvet Tres Leches Cake
Cake:
1 red velvet cake mix (size for a 9X13 pan)
Ingredients according to box (eggs, oil, and water)
Mix all ingredients until well combined and pour into a greased 9X13 pan. Bake according to package instructions. Let cool, for at least 20 minutes.
Milks:
1 can of condensed milk
1 can of evaporated milk
1/2 c. milk or cream
1 tsp vanilla
Mix together well, milks in total should equal about 3 1/2 cups.
Cream Cheese Whipped Cream (recipe below)
Chocolate shavings for garnishing, optional
Once cake is cooled poke holes all over cake with a straw. Pour milks gently over cake. Top with Cream Cheese Whipped Cream and garnish by sprinkling chocolate shavings on top. Refrigerate for at least 4 hours or up to 24 hours before serving. Enjoy!
Note: you can frost cake before or after refrigerating, this step doesn’t impact the final result.
Cream Cheese Whipped Cream
8 oz. cream cheese, COLD!
1/2 c. powdered sugar
1 1/2 c. whipping cream, COLD!
1 tsp. vanilla
The colder everything is the better the whipped cream will turn out, so if you can chill the bowl before starting that is ideal.
Beat cream cheese and powdered sugar until smooth because its cold it will still be hard, but just mix enough to smooth out and incorporate. Then slowly drizzle whipping cream in on medium speed, scraping the sides down as needed. Once all cream is added and “medium” peaks start to form add vanilla. Beat for another minute or two on high speed until stiff peaks form, be careful not to over mix! Use immediately to top the cake or refrigerate.

I'm going to make a bloody version for Halloween. I like the whipped cream cheese twist. Sometimes I feel like red velvet needs chocolate too... a suggestion is to make a ganache layer under the whipped cream after the soak. When I make regular red velvet I add milk chocolate chips to the batter or add mini chips to the frosting. Nice video!!!
A ganache layer or chocolate chips would be a great addition!

Could you just used the whipped Philadelphia cream cheese by itself?
The sweetened whipped cream gives it a sweet, lighter texture than just what the whipped cream cheese would have on its own. However if you had the whipped cream cheese and just wanted to use that I’d probably add a little sugar and maybe cream to thin it out and make it more of a cream cheese frosting. It probably would taste good, but you do what sounds good to you!
