When I was a kid, my mom would make this every Halloween ('cos of the colors). I'm 62 now and my mom is 93. I haven't had it in many years; I should make it soon, and take some up to her house!

I first had this in St Roberts Alabama in November 2020 at a RV Park because I had to have work done on my RV in Pensacola. They did a potluck. Best Thanksgiving I've ever had. Everyone bought their best dish. It was off the fing chain! This recipe was there and I loved it. WINGS EVERYTHING! ✌🏾

Another simple dish made healthy. Here in the north, we took this recipe further, tossing it in cake batter. (also, no pineapple 😂). Kids that didn't like carrots never knew the difference 👍💯

I've had this staple of Carrot Salad at Piccadilly and Morrison's. In Georgia, we still have Piccadilly locations, and I have this salad at least twice a month when lunching with friends. I will be making this recipe for the holidays! Thank you for sharing.

Damn this is triggering some bad childhood memories.
Not your recipe specifically, which I will try, but back in the 70's in New Zealand, every BBQ, every party, every group dinner... grated carrot and raisin salad, with no dressing, just the carrot and raisin. It was as exciting as you'd imagine and us kids were always made to eat it.

If, on the other hand one were to say raisins are high fructose sugar and for health reasons, then say so because Mr. Wings is already providing you with one alternative with pineapple chunks. Also, apple, pear, or plums, dates, or prunes will complement with the recipe alternatives. Carrot salad is a very healthy salad-to-side dish that blends very well with chicken, turkey, duck, game hens, ham, and even beef if it’s cooked medium to rare. Somehow well-done beef takes over and doesn’t allow the carrot salad to do its thing. In addition, you can make this recipe without the sugar. The point here is that carrot salad offers a variety and versatility that’s always welcomed at a table filled with people who like delicious fresh foods. Now! Please pass the grits 😊😊😊
