Having been a painter I hesitate to assume anything about what they might think of or why they might or might not do something, they're likely struggling with that themselves. That's the life.
As was said in the vid, the creation of tubes of paint allowed them to paint in places besides their studios. Before artists had to grind and mix their paint and had no way to travel easily with it
The matter here is that french voice is covered by the english one, better to put subtitles like we do in France. Almost when it's about a french artist.

It amazes me that these artist didn't think of painting outside or didn't use color in there painting in the beginning but artist evolve.

The same for music, instrumental technic evolution influenced the composers from Bach to Liszt for exemple. Both are greats anyway.
