Just a tip for sassy Sarah... when u fold them, just do one fold so it’s like a triangle, then use a fork to crimp the edges where the parts meet like it’s a pastry. It’ll stay together better

Sarah, you have to press out all the air before sealing the pastry. Trapped air will expand in the fryer, popping the seal and letting the contents leak out.

I have to use store bought lump crab/snow crab/ king crab, and I've filled them with chopped up Brisket, Pulled Pork, Chicken. Using bbq sauce for dipping.

When making a Rangoon take 2 tbsp of corn starch and dissolve in enough white wine to dissolve it just enough fold into your cream cheese and crab mixture. Egg wash your wrappers as you did but brush them first, then add your filling. Remember less is more with filling. You can put your filling in a disposable pastry bag. Fold the dough tight and press around edges. Try to press out the air. Now put your Rangoon's in the freezer for a least an hour. This will firm them up. Fry at 350 until they float and dont over load the fryer. Greg

When you make Rangoon's, no matter how you fold them, you have to get all of the air out of them before you seal them up.
I've never made them but this sounds like the most solid advice I've seen.
