Great question -- I've never cut with the 5.1 stuff but I don't think you "need" to. Ctrl-Alt U will create 5.1 audio tracks. I do use mono and stereo tracks on my timelines and then I make a stereo mixdown for easy export. It would make sense to me to use the 5.1 mixdown in this way but I haven't been in any places that use that so I'm not 100 percent sure!
I'm not sure because I didn't use "same as source" but I think they dropped it when they dropped quicktime. I almost always export an MXF and then convert that large file in Adobe Media Encoder (free program Shutter encoder could work too

If you mixdown video, will it let you select "same as source" when exporting? I can't seem to select that as an option before exporting.
