What’s fun is that each would be a different textile and all are useful. I sew, and lots of stiffer fabrics won’t be quite so flexible as the last example! Also different weaves would sit in different ways. A blend in herringbone weave would be stiffer, but in chiffon or crepe would be quite flexible. Thanks for the example!!
Drape is the term you are looking for. It's a big factor in choosing between textiles for different applications. Knits usually drape more than weaves, but there are exceptions. Rubber coated cloth, textile laminates and spacer fabrics (3D knits - one of those exceptions) will have the least drape. Tight weave nylon webbings and thick polyester webbings can be as stiff as a board too, even though some of the highest drape cloths I've handled are made with yarns of those same fibres.

Eowyn’s wool-silk blend in The Two Towers is one of my favorite times seeing that effect on screen btw!

Increasing the mesh density provides more vertices and edges for the solver to work with. This added complexity allows the cloth to bend, stretch, and deform more smoothly, making it react more elastically.
One would expect increasing simulation details to bring it closer to reality - not to change the properties of the system being simulated. I.e. it should look the same after a certain detail level.
