Tips below! Candy only takes a couple hours...
I love my freeze dryer and I'm on batch 37. I bought it in the summer of 2023.
I've done all the candies and tried lots of veggies and I'm hooked but I think my favorite thing to process are my diced up garlic cloves and then I used my bullet drink mixer to turn it into a powder. The best garlic powder you've ever had is your own!
    "CANDY MODE: SETTING:
FROM THE HOME SCREEN HIT "CUSTOMIZE"
    INITIAL FREEZE TO "OFF"
    EXTRA FREEZE TIME AT 0:00
    DRY TEMP 135° - 150°
With candy, you can do a batch in just a couple hours. You don't go into a freeze at all and you go right to the hot, dry and vacuuming portion of the process.
The action of heating up the candy makes the sugar expand and dry in that form.
I always go at 150° and I use 2:30. When you save and start, unfortunately there's no way to skip the initial chamber cooling, so I sort of keep the door open while I'm loading the candy instead of keeping it shut for 15 minutes. *I need to find out if there's an update that I need, so that I can skip the first step.
Anyway, after 15 minutes there will be a toggle switch at the top that you need to turn on to confirm one last time that you meant to be on this high temperature mode. (If you don't touch that button and forget, then you need to start all over.) 😂
Immediately the machine will go up to the temperature you chose and the vacuum pump will come on and your candy will be done in 2 to 3 hours depending on how long you chose. I found that Skittles can be done in 2 hours to 2 1/2 hours and some other candies need three. My machine is in the garage so it's not always the same as far as humidity. I'm in Ohio so this garage is hot in summertime so that extends the normal freeze drying cycles but it doesn't seem to affect the candy because candy is heat only.
Obviously the best time to freeze dry things is in the winter for everything except candy or anything you're doing on high temperature mode.
**I learned all of this by watching the best RUclips channel I found on freeze drying...
    "The Freeze Dried Business"
And there should be information in your book about candy😊

Take some of your Freeze dried strawberries and powder them in your blender and use them to flavor frosting, ice cream or yogurt. Then you can still use them in smoothies

I think the skittles are my favorite freeze dried food. I actually like them better than regular skittles.

My favorite is salt water taffy. Cut them in half or even thirds and leave plenty of room. Speaking of chocolate, YUM!! (regular chocolate won't freeze dry but the salt water taffy is delish)

Actually I forgot to mention that I did more than garlic! You'll want to take all of your herbs and powder them down after freeze drying them and put them in cute little mason jars right next to the stove so you have your own collection! I sure wish I could post a picture here.
I think besides the freeze dried banana slices, strawberries and peaches...my next favorite thing to freeze dry would be apple slices Drizzled with some Kraft caramel from my pastry bag, (again, I learned this from the Freeze Dried Business Channel) They were a big hit with the neighborhood kids for trick or treat! They are divine! The caramel explodes into a crunchy sweet topping on the apple. Another big tip I have for everyone is to get tools to cut everything in exactly the same pieces. A big long thing that cuts bananas also cuts cucumbers, apple slicers, cherry pitters, etc.

What is the purpose in freeze drying candy? It’s still sugar, just no moisture. Is it just for fun?

Did you use the candy mode settings on your machine? I thought it should only take a few hours for those

@@OakAbode I looked up a tutorial real quick: You have to temporarily customize your settings. Just make sure you go back to regular settings before running regular FD cycles. Candy Settings:: Initial Freeze 0F, Extra Freeze Time: 0, Dry Temp 145F, Extra Dry Time 2 hrs (or a little longer). Skittles should be done in 2 hrs. Save. Start.

Pineapple is the best, I have trouble stopping once I start. Have had my freeze dryer for over 2 years and never done skittles and probably won't.

I had no idea these sorts of treats were made in a freeze drier! (The things I learn here!) I know what you mean about some tastes becoming more intense though. I had to give up 'snacks / candies / bars ' when I discovered I was gluten-intolerant; (they hide gluten in everything). I stopped eating those things but a taste today and I can't believe what I used to 'like'. I gotta' get one of those machines!

There is still moisture in them, making them chewy. Freeze drying maked them expanded and crunchy.
