People are missing a key difference between jelly and jam. Jelly is usually thickened with gelatin, which is why it can be made with juice exclusively. Jam is thickened by the process of cooking down a combination of juice and pulp. Both generally have added sugar, but the amount depends on the type of fruit and its quality.
Face cam is personal preference on the day. Overlay is only needed when he can't hold the whole line of play in his head at once and needs written aids (at least I assume that's its purpose), so it's situational.
I haven't watched for a bit, so I was perplexed when you didn't immediately take orange pellets. I feel like when I stopped watching you would have ranked orange pellets second only to frozen eye.
My thought is that at that point, orange pellets doesn't do anything and esp since this is an ironclad run (and not say defect where pellets is potentially more impactful due to biased cog) he needed to take stuff to help him get through the act alive rather than hedge for potential flex shenanigans or clearing debuffs later on which don't matter if you can't get there alive in the first place. However I am not jorbs and am much worse than him at StS too so I may be wrong about this.
He took a curse from the whale, so he was heavily banking on that first shop making him strong enough to kill at least 2 and preferably 3 elites. It still honestly didn't, but that's why he was looking at the potions more than the pellets. This is something Jorbs tries to impress on us a lot. There is no such thing in STS as a card or relic that is always good in every situation, you have to think about this game's fights as a series of different problems with different possible solutions that your deck has to navigate
Orange pellets are still rated very highly, but that was a lot of money to spend on something that didn’t do anything at the time. It probably would be good if he made it to act 3, but it would have significantly increased his odds of dying in act 1.

The difference is in how you add the fruit component. Jelly includes fruit juice and jam uses crushed fruit or fruit pulp.
and preserves includes some rind/peel (usually orange or lemon), and marmalade has even bigger chunks of fruit than jam
