First of all no milk fat is removed ever , Infact desi ghee /clarified butter are both 99% pure fat . Normal butter is around 81% fat. Heating and getting rid of milk solids from butter gets us pure (99%)milk fat that is ghee or clarified butter which are both identical . So as seen in the video the kunafa is drenched in pure fat . I went there last week . The food and sweets available no doubt very good but that wretched road is awful and difficult/ hazardous to walk. Batla house is a lot better and food is better too.
