I know its a short scene but I love everyones reactions when Pimento pulls the knife on Jake. Boyle reaches for his weapon, BUT doesn't pull it out. Holding his hands out in a placating gesture. Doing his best to stop and calm the situation without resorting to any sort of violence. Sarge and Rosa on the other hand immediately recognize the threat, see Jake in a possible fatal situation, and instantly pull out their weapons and train it on Pimento. Neither shoot their weapons, but both demand he lowers the knife and you know that if he moves in any wrong way they are blasting him straight to hell. Every other nameless cop does the same as Rosa and Sarge, but they keep back watching from the sideline and covering any blind spots, also voicing to stand down. Holt calmly walks out of his office. Raises his voice instantly setting a commanding tone and enforcing silence in order to explain the situation and save both Jake and Pimento. Gina is just on her phone because she knows who Pimento is, because Holt told her, and she didn't tell anyone else. Because she's Gina and shes literally the worst. And she knows that Holt will stop any hostilities and Jake will be fine. Jake is the most surprising because he is completely calm. He's startled but doesn't make any moves to free himself because he knows the danger he's in and is thinking a mile a minute before he actually talks. Its a near perfect scene where you get all of the characters personalities in 5 seconds.
I'd also like to point out that sarge uses a combination of the way you deal with a criminal AND the way you deal with a child, having the physical actions of pointing his gun, but saying "Don't be a dumb dumb" like he's addressing a kid. Just like how he's physically imposing but very caring and calm
None of these responses are technically wrong in this situation despite the differences, either, just reflective of the roles they fill in the cast and as part of the 99. Everyone has a different logic for how best to handle shit suddenly going down that's probably worked in a bunch of other such incidents.

The only time we see him start overreacting or bringing in any unnecessary violence is when he doesn’t think the situation is serious (for instance, he’s never shot, nor killed someone as a police officer - which we can tell because the last time he had therapy was when he was a child, and shooting/killing in a police force leads to mandatory therapy sessions before you’re allowed back in the field. Contrast this with the federal hostage training seminar, in which he paintballs every person on sight.)
I miss Adrian. I kinda wish they gave him his own arc of getting help for his obvious PTSD, especially since the series hasn't shied away from tackling other more serious issues. Yes, some of his funniest moments are very dark but B99 has always been able to make light out of even the darkest situations with aplomb. Hope he comes back for another stint.

Holt is much more concerned with the hug duration than him "hinting" that he would like to eat him... jesus man. What will it take?! He attempts murder on your detectives many times, does cocaine, assaults people, and now he might eat someone. Literally what can't Pimento casually get away with?!

My guess is she trusts the precinct to take care of the situation, trusts they’ll save jake, and she probably doesn’t think that pimento is that big of a threat because holt told her about his being a detective
