Well chef you’ve come up with a winner again ! I’m on a low carb diet and this fits the bill , I might even try some with cooked shrimp , or crab meat , great video , keep um coming 👍🏼😃
Just made these and they turned out delicious. I didn’t have chives, so substituted shallots and ran out of lemons so used lime juice (which is a perfect pairing with avocado IMHO). For the rolling bit, I may have missed something but I think you need to get this whole cucumber contraption off the now-sopping wet paper towel and onto parchment paper before you roll. Or you’ll be having to pick off the paper towel in bits and pieces as you roll. Which is what happened to me.

Im not sure exactly what went wrong with your paper towels, maybe you need tougher paper towls some can break apart very easy…
