I just started my sourdough starter at the end of October. I quickly learned like you when you half the starter it continues to gain more in the container. I started only leaving a 1/4-1/3 and that helped with keeping the starter in the mason jar.
I’m new to sourdough so not certain, but I think the rise you get early in the process is mostly from bacteria, it takes a bit longer for the yeast to get established. You may get to a stage where it seems “dead” Day 4-6) at which point the bacteria has been slowed down and the yeast will then start to properly colonize. By day 7-10 is when I’ve usually got a reliably active starter. BUT again, I’m new to this so I could be completely wrong 😅
My mom took Coq10 years ago when she was having heart trouble. She also took magnesium and potassium. After a few months the doctor couldn't tell there had been a problem. I am not a doctor and not trying to diagnose just sharing what she did and she was much older than you.

Look up on RUclips...No discard sourdough starter. Much easier. No waste.
you can half the recipe and it won;t have so much wasted
I would think if its rising up its good for cooking.
I really wasn’t sure! lol I discarded it into my compost so at least it’s getting some use

I appreciate the information! I may have to look into the Coq10 as well! My troubles are far from gone but seem to be getting better

I feel dumb for not realizing you can make a second starter from the first’s discard, makes me feel slightly less awful about the waste haha
Why do you need two starters?
