Used to watch my father make sweet potato pie during the holidays every year. He's gone now, so I carry on the tradition. Still need to work on my crust making.

I prefer it cold but some people do like it warm. In stores it's sold room temp (out in the store rather then refrigerated), either way works. Try it warm, then try it cold and see how you like it.

To get the strings out I use a hand mixer. I am using this recipe for Thanksgiving. Thank you so much for your recipe.
I use a hand mixer, then a food processor. The food prior blender gives it a silky smooth texture that the mixer can't.
