Fascinating. In my analog synthesizers such as my Jupiter 8 and Oberheim I've always considered S&H to have a random nature (for example when routed to the filter). The Oscillators pouring into the filter tend to seem random. Is this wrong? (such as the end of Mr. Roboto by Styx as a cliche example.)
It all depends on what the S&H module is actually sampling (in the video, an oscillator). If you make it sample a noise generator, then it will be random, although in discrete steps :)
