  • Clear Veggie Soup is my idea of comfort in a bowl when there’s a nip in the air! It’s light, hearty & delicious. Also vegan, made using my vegan veggie stock (recipe on feed)😊

    Ingredients:
    🫒2 tbsp Olive Oil
    🍠1 tbsp Ginger
    🧄1 tbsp Garlic
    🧅½ cup Onion Finely Chopped
    🌿½ cup Coriander Stem Finely Chopped
    🥕½ cup Carrots Finely Chopped
    🥒½ cup Beans Finely Chopped
    🥬½ cup Cabbage Shredded
    🍲4 cups Vegetable Stock
    🍚1 tbsp Corn Starch
    💧1 tbsp Water
    🍋1 tbsp Lemon Juice
    🧂Salt
    🌑Pepper
    🌿Coriander
    Method:
    🍵In a pan sauté ginger and garlic in olive oil and then add in the onions and cook till translucent
    🍵Add in your coriander stem, carrots, beans, cabbage, salt and pepper. Mix well and cook for 2-3 minutes. Remember not to overcook to retain the crunchy texture of the vegetables
    🍵Now pour in your vegetable stock and bring the soup to a boil
    🍵Make a corn starch slurry and pour it into the soup to get desired consistency. Boil further for 2-3 minutes
    🍵Turn off the flame and add in your lemon juice and fresh coriander leaves! Serve Hot
