  • In this tutorial I show how to make an excellent gum paste, suitable for making flowers, modeling and moulding.

    Ingredients:
    2-3 egg whites (75 grams) or you may use store-bought pasteurized egg whites from your local supermarket. If the eggs are large use 2 egg whites, if the eggs are small use 3 egg whites.
    1 lb. of confectioner's sugar (454 grams). (Reserve 2/3 cups)
    2 Tbs (20 grams of tylose or CMC)
    1-2 Tsp vegetable shortening
