Salmon and leek cream - Sergio Cocina | RTVE Cocina

On cold days you always want a spoon cream with a light texture and lots of flavour. Chef Sergio Fernández shows us how to make an easy and healthy winter soup. The base of almost all of them is usually a good stir-fry of vegetables and we can play with whatever vegetables we have in season in the market. For this recipe we only need salmon and leek.
INGREDIENTS
1 leek
100 g salmon meat
40 g butter
1 tablespoon flour
1 glass cream
1 litre and a half of mild fumet
Salt, ground pepper
Fresh chives
