That's because he actually respects them. He's in their house and he's genuinely interested in exploring the culture that goes into their cooking. Also, the food is delicious and they are clearly experienced cooks/chefs, which he certainly also respects.

Every local Hawaiian cook has their own "secret" marinade recipe. But it's basically...Coarse Hawaiian sea salt(pa'akai), kosher salt can be substituted....paprika, chili powder, granulated garlic/onion powder, chili flakes, coarse ground black pepper....Add as much, or as little, as is your preference. Cooking, especially BBQ grilling, is HIGHLY subjective because EVERY cook has their own taste preferences....like an rain drop in the ocean's water.....

I was here two months ago with my family. The ride up the road was beautiful. The chicken and ribs we got were so good, and we had sweet little dogs around hanging out with all the customers while they ate, just chilling and letting everyone pet them. It’s a great time

I went last year with my family. Maybe the first family trip where no arguments broke out. It’s impossible to not be happy in Hawaii. The drive was truly amazing as well!
This is the Road to Hana, right? I remember going there years ago with my family and the traffic was so bad it took like 3 hours and we only made it halfway before turning around, lol. It was a nice, sunshiney day, and the views were beautiful, but the traffic was just insane.
A great way to feed the locals is to be a “local” and experience the area and food along the way. Can’t wait to see what Gordon prepares at the end of the week.
Chef Ramsey, the term “hulihuli” means to constantly turn. TRUE hulihuli moa (chicken) is using a rotisserie on a spit and Keawe wood. The wood is what gives the moa its distinct flavor.

I was lucky enough to try this chicken in beautiful Hawaii last month and it was incredible.
Just got back from Maui with my wife and I drove Hana road and found this place.... It was the best food and best place to eat on the island. The owners and staff were awesome and obviously loved what they do. Making a living BBQing on the coastline can't get any better. And prices were very fair for the distance traveled to get ingredients there
Hawaii is a fantastic trip a couple years ago. The food to die for, it is a must visit just for the food, the scenery is second. Amazon, car hop trays.
The chicken (and pork) have a unique flavor due to the wood used... I've had cue in TX, KS, CO, ID, CA, PA, NC, VA, etc... and this stuff is as good as any, and a little different. Super portions, $20. Do yourself a favor and take the back way into Hana, probably best done on an ADV, and def not in a rental mustang :) Stop at a fruit stand, the one closest to Kipahulu is run/owned by the guy who started the organic farmers association. 600 curves if you go all the way around the island.

I can't tell you how satisfying i find it when Gordon loves the food favorites he tries of the locals wherever He is.
If you’re ever in Hawaii and see a tent with people cooking chicken on the side of the road, stop. Trust me.

such a coincidence i run into this video on the same day I sampled some huli huli chicken for the first time at a food hall. It was delicious! much better than pretty much any teriyaki chicken I ever had.

Huli Huli (turn turn) chicken is one of the best-tasting dishes I've ever eaten.
Huli huli chicken seems familiar to the filipino bbq liempo. Could have originated from filipino immigrants. I could be wrong but it's very similar. Instead of ketchup, we use banana sauce which is our ketchup.

I drive that road 3x a week both ways and I always see something g new
important points: brine chicken, season chicken, slow cook chicken over wood/coals
BBQ chicken, done right, is an absolute delicacy.
The problem is, doing it right. It is SOOOOOOOOOOOOOOO easy to overcook chicken, and we all know how ""good"" undercooked chicken is for the human internals.
It takes mastery to get it just right.
Cant wait to go back to Hawaii.
