I definitely agree with you on a chain out of the box does not cut as well as a chain out of the box that has been sharpened. In my opinion the sweet spot for a chain is once the teeth are about half way down. I personally would like to see the work done on the 362. Thanks for sharing Stay safe
Looks like your 365 has open loop transfers, which would explain rpm difference. Should be easy to grind on. 362xp vs 365 open would be a very interesting comparison. Go 362 first.
If it were me I'd put the original cylinder back on. Especially as the saw isn't mint. If there's no scoring above the exhaust it'll be okay just put an aftermarket piston in you've nothing to loose but should work 100% anyways. Call it an experiment 😉
