    Pandi Curry Masala
    - ¼ cup coriander seeds
    - 2g cinnamon
    - 2no cardamom
    - 4no cloves
    - 1 tsp fenugreek seeds
    - 1/2 tsp cumin seeds
    - 1 tsp pepper
    - 1 tsp raw rice
    Pandi Curry Paste
    25g Coriander
    15g Ginger
    20g Garlic
    1no/100g Onion
    4no/ Green Chillies
    Pork Marinade
    1kg Pork
    1tsp Salt
    ½ tsp Turmeric
    1 tsp Chilli Powder
    Coriander
    20no Curry Leaves
    1 tbsp Vinegar

    Nice video and nice recipe. Death Metal koriander seeds 😂 Kerala? When I hear Kerala I think of fish curry so I'd love to see something like this - or expand my sight and get surprised by something I haven't heard before.

      Kerala is famous for fish, beef, pork, duck, etc. I think Angamali city in Kerala is like that pork capital 😂

    Request you to please upload a video on spare ribs at Lings pavallion or similar indo-chinese joint. The spare ribs in usa are cut to bite size pieces or r the rack which is a different style. I can't seem to find individual cut long ribs that are fried and then braised in yummy sauces like in India. Really miss those.

      Yes you can. And Otti or Akki Roti are the originals. I used a rice bhakri. Now they are similarish but it's basically made with rice flour and water. Rolled out and cooked on a pan.

      The akki Otti from Coorg is normally made from rice and rice flour

      You are welcome to swap out pork with a meat you eat but I will always make whatever meat the dish is originally made with.

    that corriander is burnt. shouldnt be roasted that much

      No sir it is not. Just like your coffee beans are not burnt. You have to really push them to extreme levels of darkness. And I know it's not burnt because it has no acrid taste. It's a fine line but I did not cross it.

      Personal preference, but I’m not a fan. I never really liked pork and wound up marrying someone who didn’t eat it for religious reasons so I don’t eat it at all anymore either. It tastes fatty in a bad way to me. I much prefer chicken or beef.

      To me all are different. It's like asking which fruit is better, banana, apple or orange. They are all 3 fruits but they all taste completely different. I would always say try pork. Best to get pork with less fat the first time you eat it. But it is delicious. If you enjoy both chicken and mutton you will love pork. It's right in the middle of the two.

      It just depends on who makes it and how they make it. I love them all. Pork fry with tapioca or beef fry with tapioca is very famous in Kerala

      hahaha yeah so Mexican and Indian food is quite similar. Yes the taco/tortilla is one of the things kind of different. They use a lot of corn. The chilies are quite different. That's where a lot of the variation in flavour comes from. Quite possible the tomatos, coriander and other ingredients themselves have different flavours, albeit not major but minor. But yes very similar.
