The Orthodox Icons you see is Saint George and Saint Paraskeva.
Saint George is our family Saint passed on from generations, the protector of our home and family from evil.
Saint Paraskeva is my Saint, she chosen me on the 27th October, the day I celebrate her every year because on the 27th October, I was saved from Meningitis that has killed me but miraculously got back to life. Her prayers saved my life. Saint Paraskeva is a Saint known to pray for ill and sick children who would die without her blessings. If it wasn't for her prayers, I wouldn't be here today.
I'm the only Serb that celebrates two Saints. Most that I know only celebrate one.

Just wondering about the rolling pin method - does it leave all the rib cage bones in and just remove the spine.
I gave it a crack once and it just snapped off all the tiny bones and left them in the fillet
So now I cook them whole -
Once cooked. the meat slightly seperates from the bone - and if you are careful you can use you lips and teeth to slide the flesh off and leave all the bones attached to the spine

It removes part of the rib bones as you pull the spine. Having said this, make sure you roll the roller on fish a few times to make it easier to remove spine. Everytime I pan fried it, I eat the bones and the lot.

@@aft-fishing90 thanks mate - like you say - if you fry them in oil - it just adds to the crunch😊
