My family has a recipe for what we call Vermonster Pie. It would be a perfect type of pizza for fall! It's pizza dough (don't pre-cook it, it's better baked all together) brushed with melted butter, garlic powder, basil, and oregano. Top that with thinly sliced apples, then canadian bacon, or pork roll, or ham (pork roll is best) and then shredded sharp cheddar on top. Bake at 400 till about 20 minutes or until the crust looks cooked. Sorry I don't have a link but it is so so delicious!!!
Will be watching in the months ahead to see what pie recipes you develop from this experience. Many of the savory pies can be made with whatever is at hand, that is why they were originally created. Love this series.

Pizza is pie. You buy it either by the pie or the slice. NYC is thin Chicago is deep-dish. My son makes a fantastic spinach and ricotta pizza. No red tomato sauce. Home made pizza dough. Spread dough in a large pizza or large cast iron pan. Let rest in pan about 10 minutes Pre bake about 10 min. Top with Roasted garlic and olive oil. Sprinkle lightly with parmesan add layer of Mozzarella and add layer of spinach. Dollop entire top with as much ricotta as you'd like and bake at 400F until crust is brown and toppings are melted. Best white pizza you have ever eaten

Had you made this months ago before your month of pies with so many pies to compare it to, the response might have been better. I also agree combining some of this with the tomato pie is a great idea.
I just thought of a pie that I grew up eating. It was a special treat and sometimes requested on birthday’s….Taco Pie. The crescent roll version. Not hard to find on the internet. One thing we changed about it was adding crushed Fritos or crushed Doritos instead of regular crushed tortilla chips.
This reminds me of the pizza I had in Chicago at Genos East. The crust was kind of cornbreadish and thick the cheese was on the bottom and the sauce on top. That would be a great one to try.
I used to make something similar. The only thing different is the “crust” was cooked spaghetti with the ricotta and eggs to hold it together and then topped with sauce and toppings. Then you bake it.
Perhaps use other cheese than ricotta and parmesan… perhaps fermented kneaded cheese ( that’s from Romania and goes great with eggs, basil and pepperoni) September pies is awsome! Thank you for a great time 👏👏👏
Well it looked pretty darn yummy to me. Maybe just an adjustment on the first cheese you poured into crust. Maybe too soupy. It really looked totally Delicious. And isn't pizza called pizza pie anyway.I loved it. thank you Megan!!!

Mix 3cheeses together yes, add mozzarella in with the ricotta and parmesan w/2eggs, only one egg per pie…then add cut up salami or the pepperoni in the mix as well, top it w/thin layer of sauce, layer pepperoni on top, sprinkle mozzarella on top, w/basil and/or oregano.

Do you have an iron skillet? You could make a Toll House chocolate chip cookie pie.. It's just a giant cookie..but? Or you could put it in a pie shell and cook for an hour and the butter floats to the top to form a top crust! P.S. That pizza pie looks yummy to me..anything lasagna or pizza is a hit!! Yeah.. Actions speak louder than words.. looked like seconds were happening!! Here's an idea for tweaks.. Just use your 9x13 dish and put cooked lasagna strips 2 layers deep on the bottom and sides only for a crust and put only the liquid filling in and cook that first or almost done then add the other items to finish?

I would have thought the sauce would fall into the cheese layer but it didn’t. You didn’t say what kind of tomato sauce you used. (I read the recipe-it said to use your favorite sauce). I’m surprised they didn’t love it- maybe too much ricotta. Still fun to watch.
Try this: Use HALF of that ricotta container, one cup of parmesan, one cup of mozzarella, AND no more than 2eggs! Mix, and then stir in cut-up salami pieces, or pepperoni, or a mix of ham, and/or your choices, along with some chopped basil or spinach. Pour into your 2 pie shells, top with very thin layer of sauce, then pepperoni, then mozzarella again! Sprinkle oregano and basil on top! 😘👍❤️
It is nice that you are making pies, but I will be glad when it is over and I see more of your other wonderful creativity. I enjoy your visions of thrifted items more than on-going pie making. I can make my own pies if I want them. However, you have done a good job at it.

Yeah, I don’t think you can use them for cooking but we are reusing them again and again as pie weights!
