This is absolutely brilliant. I had already decided to de-stress by subbing chicken for turkey, and this gives more ideas. Plus doing some of it the day before makes it even less stressful. Bravo!
cold stock to hot roux = no lumps Stuffing/dressing = gotta be goopy, loads of butter stock and a few eggs to that bready veggie mix. Add soy sauce/paste to things!! My green bean casserole will always have soy sauce.
Tip for the gravy if anyone wants to darken it more, you can brown the butter and cook the roux longer (both in absence of drippings). There are different kinds of roux and just cooking it longer to darken it a bit is no big deal (there is even a black roux). Browning the butter will also add some color as well as some nutty flavors. Happy Thanksgiving, happy holidays.
Our refrigerator died over the weekend. The new one gets here on Saturday. Luckily in Maine our porch is a crisp 37 degrees. The turkey is on the porch thawing out. The beer, milk and butter are also hanging out on the porch. I'm picking up fresh veggies from the grocery store on Wednesday. The only substitution I'm making is canned artichoke hearts for sausage in the stuffing. THE SHOW MUST GO ON!!!

An easy way to get the gravy to be brown is to brown the flour and buttery prior to adding the broth! My grandmother has always made gravy that way, either for thanksgiving or a standard southern breakfast gravy!

I feel I could sit down and have a drink with Sam. He loves cooking, Tequila, Chicken Thighs and Mayo even though it's not Dukes. You and the boys have a great channel. My dad was a meat cutter not a butcher as he would always remind me and he would take cuttings pork and beef. After cubing them he would slid them on a wooden skewer and call them Mock Chicken Leg. All you had to do was bread and fry, great childhood memory. You all always take me back to better times.

My family is not doing a traditional Thanksgiving this year. A turkey will be roasted, yes, but only for sandwich material. AND, it will be butchered like you would a chicken, so the white and dark meat can be cooked to perfection. Or, at least, close enough. Plus, we will be celebrating Thanksgiving on the Saturday after the holiday. The main course? Spaghetti. And, I'm not mad. I like spaghetti. 7:54 I can relate! What I’ve learned, though, is to hold the top of the stem and gently pull the leaves off “backwards” (against the grain, so to speak). Then I use the tender top of the stem that I was holding as well.
