    I hate cooking (well, hate is maybe a bit strong) and the whole process of cooking for other people just stresses me out but watching you do your thing is really calming and confident and zen which is kind of changing my perception. And I love the Q&A because you’ve got this inner calm and strength that just deals with stuff honestly and without pretension….. Joe’s a lucky guy but, to be fair, so are you. What a terrific match.     Love your vids ryan. Not formally trained but always enjoyed cooking at home. Nice to get these tips from a chef. Also helps when the chef is easy on the eyes. 😅

    Ryan, what's your brew recipe? I'm curious what ratios, weights, and timings you're hitting.

    Iam bummed I missed your LA trip, lots of cool places the further north you go for wine and local produce too. Iam in the Ventura, Santa Barbara area and further north into Solvang has some good wine too. Next time you come would be fun to go explore some places.

    Just catching up on your past vlogs that I haven’t seen. You two are true connoisseurs of coffee from how you prepare and brew it but the new machine you recently acquired. The segment on knife sharpening is a lost art for the home cook. They’re like extensions of the chef. The process is almost meditative. Good that you rewarded yourself with a premium glass of whiskey. I suspect another flavor pallet you’re developing. Lastly I love the way you dodged the question of being a rice queen and you talked about the advantages of your new rice cooker. And then Joe rattling off what need for the perfect meal including a little MSG. 🤣 I love watching you guys and I always look forward to yours and Joe’s vlogs. I know it takes time to edit but it’s much appreciated. Stay well 👍🙏😎

    Knife Sharpening is my relaxing time when I can just focus on the craft, I like it so much that I opened up freehand sharpening services to local restaurants and home cooks in my off time from work. Props on the Shapton pros, those and the Naniwa pros are my favorite synthetis. Highly recommend ditching that old stone flattener though and getting something like and Atoma Diamond 140 for flattening, you can always upgrade to one of the lapping plates from Nano Hone or the Shapton diamond glass lapping plate, but at $80 the Atoma 140 is the best bang for your buck and it will work on pretty much any grit stone.

    Is there a difference when sharpening a Japanese style vs western style knife on a wetstone?

      Mostly just the angle of the bevel! German style knives have a common 20-25 degree vs 12-18 or something

    Your knife sharping is interesting…. Way to long of a process I use a ceramic stick and I do it standing up sharpen away from you never towards you something I learned while working in a meat factory for 8 months i never like the bricks

      Don’t wanna be the ‘acktchuallly’ guy but that rod is a honing rod and is similar to the leather stope I finished my knife with. The ceramic does a better job than leather but still is focusing on any bent fibres along the existing bevel and not actually sharpening. It’s really a tool to keep a knife sharp and not resharpen 🤓

      @@Freyaaamira I don't know any 23 year old guys who do pour over and have a scale and sharpen knives on camera and have tattoos that like that. And there plenty of guys who drink coffee, work as line cooks, and have tattoos. The F2Ms are everywhere on RUclips. It gets frustrating after a while clicking on videos and realizing after a minute or so that something is off and when that repeats itself over and over it's annoying.
