Berries & Pineapple Summer Salad Recipe

Recipe:
Serves 4
Ingredients:
10oz Spring mix greens
1 cup fresh blueberries
1 cup fresh strawberries, quartered
1 cup diced pineapples
1 cup candied praline pecans
½ cup crumbled goat cheese or feta cheese or blue cheese (I used goat cheese)
1 LB Chicken breast sliced
For the pineapple vinaigrette dressing:
1 cup pineapple juice
6 tablespoons white wine vinegar
3/4 cup extra virgin olive oil
2 tablespoons organic raw honey
Salt and pepper to taste
Combine all the greens and fruits in a large platter. In a pan add some olive oil and sear the chicken breast with salt and pepper. Add a splash of white wine vinegar and sauté until golden brown on both sides. Add all the dressing ingredients in a mason jar together and mix well. Add the mixed greens and fruits to a bowl and and top off with the candied pralines, crumbled goat cheese, chicken and dressing.
Serve and enjoy immediately.
