if you can ever travel to baja I recommend it, I grew up vacationing there (from california) every other weekend during warm parts of the year, and eventually bought a little property out there, best memories of my life. I recommend going to Estero Beach (in enseanda , baja)over there, amazing resort; some of the best beaches are in baja compared to other SOCAL beaches. Baja California has something for all ages. It is very underrated because lately Americans have been scared about a decade ago because of the violence which mainly doesnt affect tourists or tourist cities. Now its safe, Police are more of a problem than the people. I can recommend many places there Ensenada is a must, San Felipe too, Rosarito, Cabo San Lucas if you want to go on a cruise or fly.

It is my goal to open up a restaurant of my own in the future but I want to make it as authentic as possible. As of right now, I am completely obsessed with Mexican food. @@BentLeey It's basically a concentrated broth of whatever meat you're cooking. Each kind/type of mexican consomés is different but for the one in this video you first make the barbacoa in the traditional way and the consomé is the juice of the goat meat that results from the process, seasoned with chile serrano, oregano, coriander and raw diced white onions. Beef consomé is made with a lot of varieties of mexican dry chilles. You can search for consomé recipes on youtube. Not all recipes are equal because each state in Mexico does it differently.
Personally I feel like guacamole should never be liquid or sauce like. That guacamole you had is exactly how it should always be. Perfectly chunky and full of avocados. As a Californian, (not speaking for all) avocados and guacamole can be such a staple.
Luis R I’ve definitely eaten that. It’s basically like an avocado green salsa. I’m more so referencing the creamy smooth stuff you find in a grocery store container. Almost a crema style consistency. I guess I wouldn’t never think of that style as true guacamole. The fresh ingredients and chunky like guacamole is definitely the style I would prefer.

Mark, when you were asked what is the spiciest food you have eaten then you said it was the same with food ranger, i didn't think it was really it... i thought it was the double devil soup in Japan where you forgot to remove your bib... i really thought your going to say what i thought then i was wurprised it was not. but its ok... i do love your respect for food, the way how it was prepared and you are respecting every culture in every country you go.
