I made this dish today using my own home-made chicken stock (bones from deboning the chicken). It was delicious! The chicken was so tender and flavourful from the marinade. The rice was PERFECT. It was hard to find pandan leaves here (in Canada) so I did not include it. It was still so tasty though! Thank you for this recipe!
I also live in Canada (Ontario) and I found pandan leaves at my local asian grocer. it was under a different name (Chan Xiang Lan) It comes in a bundle of leaves. So I use one or two then freeze the rest until the next time I use it. Trust me when I say the leaves elevate the flavour to a whole new level :)

For Bro Roland's viewers, I've tried this method and it also works with "whole leg" or "chicken maryland", with a bit of modification. The area that seems to undercook is the area near the joint where the drumstick and thigh meet, so two small cuts on either side of the joint on the UNDER SIDE (viz. four nicks in total) will help the heat penetrate. Also, being a whole leg, the aromatics such as ginger and garlic can be crushed / grated and made into a paste to be smeared all over the joint. With a domestic rice-cooker, usually the steamer basket will only accommodate two such medium "whole legs", so that's ideal for 2-3 persons. After it's cooked, there'll be additional 15 minutes or so resting time for the whole leg to cool down, then when the leg is flipped to its underside, the bones should be exposed at the point where the cuts were made. Just follow the bone to the end and cut along its length and using the point of the knife, the meat should easily be separated from the bone along its length. Then it can be neatly cut up into bite-sized pieces as per the video.

Pay a little extra and buy good quality chicken instead of buying cheap Aldi, steggles or RSPCA chicken. You get what you pay for. I shop at Coles and buy their Slow Hills brand chicken. You can taste the difference.
Thank you for yet another awesome recipe! Good for folks who are busy and can't cook chicken rice the traditional way, but yet crave for it. I tried it out today - quick, minimal washing up to do and so delicious.
I tried this tonight. The rice and chicken came out perfectly aromatic. And the chicken was super tender. Because there’s no vegetable apart from the cucumber, I did a simple clear soup with carrot and cabbage to have with our chicken rice. I didn’t have the chilli sauce so we used sweet chilli instead. And I think the next time I do this, I’ll get some chicken fat to fry up with the ginger, garlic and spring onion at the start. 😜 My rice cooker has a “brown” button in the same spot as the “fry” button on yours for the same thing.
Excellent idea of steaming the chicken while the rice is cooking. I never had that idea. Normally steam the chicken on the stove. From now on will follow yr method of cooking. Save time and safe gas too. Thank you.

Hihi. If your instant pot pressure cooker has a cook rice function, you can use that when cooking the rice and chicken. There should also be a sauté function so activate that to stir fry the ingredients before adding rice. Hope this helps.
