  • Today, I'm sharing my life this week, which was a big Walmart haul for summer foods. I'll also be showing you a few refreshing items that I ate. I'll be back next week with an extreme budget video. Thanks so much for watching!

    ⭐️ CHIA SEED PUDDING
    2 tablespoon chia seeds. -may want to add more later if you want it to be thicker. I used 4
    1/2 cup milk of choice - I used vanilla oat milk
    Fruit of choice - I used strawberries +a frozen berry mix with blueberries, raspberries and blackberries
    2 -4 tbs Chobani Greek Coconut Yogurt
    *optional sweetener like maple syrup ( I didn't use any) or can use sugar.
    1 -2 tbs cacoa powder or cocoa powder.
    1 scoop of protein powder - I use Orgain UNSWEETENED plant protein (No ERYTHRITOL!!!!)their sweetened version does have erythritol.
    *optional - added vanilla
    Mix together chia seeds with milk of choice, cacao powder and sweetener if you're using it. I didn't use a sweetener because I prefer to get the sweetness from the bites of fruit. Stir a couple times after adding to the fridge. Let sit until seeds have absorbed some of the water. You can always add a little more milk, or seeds depending on how thick or thin you want it to be. Different protein powders will impact the consistency. I usually make it the night before. Top with coconut flavored yogurt and fresh berries.
    Could also make one with mango by pureeing half of the mango and then chopping the rest of the mango to add to the topping. Great with coconut.
    To make a beautiful blue colored chia seed pudding, blend in some blueberries to the mix.
    If you're new to eating chia seeds, you could always start by adding a teaspoon to a smoothie. My son eats chia seeds in his smoothies, but I generally don't like the consistency in my smoothies.

    Love your videos, I have 2 in college and your recipes are great for them on their budgets. The recipes are easy and practical for them to prepare. I often get many of my lunch ideas from your channel. You always do a great job and I look forward to Sunday mornings when I get to watch what you have created.

    Thanks for the chuckle today with saying chia seeds fight inflation. We all need to eat them then! I think you meant inflammation, but I liked it the way you said it. LOL! Thanks Michelle, love everything about your recipes and channel. Your ideas are so unique, healthy and cost saving!

    Good morning Michelle, yeah, it hasn't been that hot here but the house gets hot inside and doesn't want to cool down, even at night. Anyway I really loved the looks of that chocolate chia pudding. I've never tried that coconut yogurt so I will pick up at least one next time I am out, i really like that brand too. Have a great week and try to stay cool, pets definitely don't like the heat either, I dog sit my grand-dogs every week and they like to sit in front of the fan on high.       It's pretty much the same thing with me...it's always warmer in my house than outside. We've had warm nights too. I've actually been leaving my big fan on for Meesha when I go to work. She can choose to lay in front of it or not, but at least I know she's not hot. She's such a princess! 👸 she has a good life! Have a great week. See you Sunday friend! 😁

    Maifun salads are also a fav. I soak mine in warm water vs cooking. I also like watermelon sticks, sprinkled with tajin and dipped in coconut yogurt (opt lime zest mixed in).

      I agree....I think I made that a while back but I don't think I used the Maifun noodles. Need to make this again but with the noodles. 👍

      True! I’ve been noticing prices at Fry’s (which is Kroger, but it’s Fry’s in AZ) has been cheaper for sale items than Walmart.

    One thing I have never done is make chia seed pudding. I have been meaning to (looks good, and I always have a lot of chia seeds), but now with this video I am further inspired. I think it is the addition of the protein powder and/or cacao (flavanols!) that pushes me. I've greatly upped my nutrition game, and greatly scaled back on desserts. Pudding normally isnt my thing, BUT as a means to get a little sweet and load up on nutritional aspects.. YES.
    I use Orgain. I would likely swap the protein powder for their meal powder just to get more nutrition. Just a preference and what I typically have on hand. I think they have an unsweetened version of that too. Oooh, or the premade liquid in lieu of the oat milk. I usually have those on hand for grab and go option. I just never would have thought about doing any of this until watching you construct yours. Thanks!

      😂 you should see all the things I normally edit out 😂 I misspeak frequently. Yeah I like to mix things up with the overnight oats, the chia seed pudding, and the shakes in the summertime. My son likes chia seeds in his shakes, but I don't. I think I forgot to mention to let the chia seeds set to soak up the liquid. Obviously, I was rushed this week 😂

    Rice cakes and cottage cheese has been a diet food since the 80s, I remember my mom eating it a lot after having my siblings and still eat it as a treat.

      I can't really eat cottage cheese anymore but I would love that, and maybe also with some fresh sliced tomatoes on top of that...although I would probably go for the plain rice cracker cakes for that.

    💟🧑‍🍳 Michelle what an amazing vibrant haul of delightful healthy versatile options for summer meals. Great tips!!! APPLESAUCE warning and who knew they started putting things that are unnecessary. Back in the day applesauce was apple, maybe water and a tad of salt. 😢. PICKLES TOO SAD. High fructose and fake sugar and fake colors. I love both. Chocolate 🍫 with fruit is a winner. Chia pudding too. I used to make a mint matcha and top with stony field vanilla yogurt and a few chocolate chips. You were wise to shop in one place to conserve your energy for other things. Though I do enjoy seeing you bargain hunt for ingredients. 🩵

    We eat so many salads or things that have lettuce as a garnish that i've started buying the 6 pack of lettuce at sams club when i go there. It's the cheapest price around here for romaine. It's $4.37 for 6 romaine hearts.

    Ooohh.....mini peppers (2 bags? Can't remember), halved and clean. Combine 1 can refried beans, 1/2 o 1C salsa. Stuff the halves, bake for about 18 mins at 350. If you're feeling cheeky, some cheese over the top.

      @ArdentMichelle I would say compare air fryer time on a standard recipe that lots of people make with the standard baking time, and then proportionally do the same with this one. For example, if it normally takes half the time, just cut this time in half. I would probably keep an eye on them after 10 minutes, but since I don't have one, it's hard to say

    I had to stop the video and make the chia chocolate pudding for breakfast as I had all of the ingredients. I will serve them in an hour. Yum.
    I am so jealous you can get unsweetened applesauce. Never seen them in Australia except for baby food which cost a dollar a pop. I'm on a mission now to find some. Maybe I should join Costco again. Problem is I go to buy frozen berries, nuts and dry fruit, but end up buying a cubby house, swing set and vacuum cleaner!$$$!

    I adore the Chobani low sugar yogurt in the lemon flavor. I use it in overnight oats with frozen blueberries. So scrumptious!

    since it is 108 here in central northern Calif. I would not make these till it cools off but maybe since it so hot maybe the split peas will be on sale: Split Pea Soup
    Ingredients: 2 Tbls. butter or ham drippings
    1 stalk celery,
    1 med. onion sliced,
    2 quarts water,
    1 lb. split peas,
    1 carrot
    Ingredients:
    1 sprig parsley,
    1/4 tsp. salt, or to taste
    1/16 tsp. pepper,
    paprika
    use 1 cube of ham bouillon or if liquid 1 tablespoon for favoring several companies make it but the cheapest is
    Goya Ham Flavored Concentrate - 1.41 oz Sabor a Jamon de Cocinar (2 packs) $1.97 from WalMart
    Recipe instructions: Heat fat in soup kettle, add onion and saute till lightly browned. Then add boiling water, washed split peas and all other ingredients except the paprika! Cover kettle and heat to a boil. Turn down to simmer. Simmer for 1 1/2 hours, (stirring occasionally to prevent sticking) or till peas are mushy. Serve hot with garnish of hard cooked egg, grated cheese, or chopped parsley & paprika.

      Welcome 😁 Let the chia seeds sit for awhile before serving so it has a chance to thicken up. I think I forgot to mention that in the video 😂

    Here in Sweden it's rainy and cold, but it's so nice Grocery shopping with so many fruits and veggies in season. I'm longing for lots of salads! I wish I liked chia pudding but I despise it😅. It looks so good and is healthy but the consistency is not my thing. Have a good week!!

    We were near a Winco on Friday and stopped in to get some things from the bulk section. You used nutritional yeast in some of your recent videos, and I've never had that, so that was one thing I got. Also, a small bag of TVP. My first experience with TVP was in 1973 when my mother was doing the grocery order for my dad's store. She thought she was buying 50 small bags (probably 25 lbs.), but what they sent was a huge bag (the size of chicken feed). So, she took it home and used it with her beef dishes until it was all used. Very thrifty of her.......I'm hoping to learn how to use the TVP with cooked lentils (& maybe rice?) to make my own taco filling, or fake meatloaf mix. Any ideas on that?.....Carla H.

      I think that's a great idea! I'm kind of new to using the TVP also. I sure did like it on the rice. The texture combination was nice. Also....I like to microwave it awhile to get the tvp chewy. I think a meatloaf would be a great use of it.

    here in the central northern Calif. It is today 108 and tomorrow is suppose to be hotter. this is the hottest it has ever been here. We have keep all our cellar shades and curtains down today and hoping that we don't have a brown out but since we have solar I am hoping we will enough of a charge for tonight also

      it is even to hot to go outside to grill or use our solar cookers for tomorrow we will have to set up the solar cooker early before 9 am but then it should take a short amount of time and not sure we will want to go out

      sorry about that...I just added the recipe to the description area. Typically it's 2 tbs per half cup of milk, but adding in protein powder will impact the density. It's really about how thick you want it. You can always adjust it.

    I made chia seed pudding once before and no one in my family could eat it. It's the sliminess. Is there a secret to deal with this because I know there are a lot of benefits to chia seeds.

      sorry....I was in a rush to get this one out. Definitely let it sit a couple hours at least. I think I did the first part of the video one day, and then the other part the next.

    Hopefully this doesn’t come off the wrong way, I love the content of the videos you create, but I am wondering if there’s a reason for the whispering in all the videos? I’ve watched for a while and that’s always one of the things I keep focusing on without trying to 😅 I’ve thought maybe you’re trying to be quiet while filming because there’s others in the home or something, but since it’s in every video I watch, I figured there’s gotta be a better reason lol
    Keep up the great work though, I appreciate the meal ideas you put out! 🙏❤
