I went to Vietnam a couple years ago. I fell in love with the people, the Countryside and the food. I just wish the flight over wasn’t so brutal or I’d be there a lot.
We usually travel deep Mexico every year for 3 months due to the brutal winters in North western Montana. However this year we went to South East Asia and New Zealand. We just got back a few weeks ago and and are already planning on going back at the end of summer. Even though the weather will not be ideal at the time, we just can't wait to return. You are right though, the 30 hour trip from Montana is brutal.

I live in India so I'm generally used to alot of flavour and I've had quite a few sandwiches from around the world, but holy fucking shit, I had never experienced a sandwich tasting that RIDICULOUSLY good, ever. In my life. I had to sit down for a second because I did not anticipate those flavours lol. Cant imagine how much better it would taste in Vietnam itself
I was in Saigon for 2 weeks and had trouble finding banh mi open at night even though I looked almost every day This was almost four years ago right as Covid was happening though.
Same for any food really The best are always in small shacks huts or food stalls / carts. It could be survivor's bias weeding out the less successful ones but hey whatever works

It’s ALL in the bread. I got taken to a garage bakery that supplied a few of the famous spots in Hoi An, Vietnam. Literally two chain-smoking, shirtless dudes bashing out 3k Vietnamese baguettes a day. It was an awesome experience to watch these guys in action. Their mix was 50/50 bread flour and rice flour. Great day!
It really is all about the bread. I went to get a Bahn Mi in Texas and was disappointed because the owners wasn’t using a French baguette for his. He used an Italian load instead. In New Orleans we call the Bahn Mi the Vietnamese PoBoy because it uses the same bread as all other PoBoys and it’s an atrocity to make it out of any other bread type. I decided to only buy my Bahn Mi from authentic Vietnamese people from then on.
The best foods are ones made by the road sides bc these mom and pop carts very survival depends on their craft and if they are no good, they wont be around for long.

As a vietnamese, don’t come to HaNoi to try bánh mỳ, they always put ketchup and mayonnaise instead of the meat sauce, studying 6 years in hanoi has been hell for me cus my go to choice for a quick healthy balance meal is ruined
You probably don't know but mayonnaise, ketchup, or chili sauce or hpt sauce are all foreign, western productions. It economical and easier to produce (just need to buy it from store) and it still acceptable and still delicious. You could get more expensive banh mi for more things in your banh mi but he sauce are depends on the version of banh mi you're eating. Maybe it a braised beef, pork, ect. But not only mayonnaise and ketchup, banh mi are also filled with soy sauce They could balance the taste of the soy sauce by putting spices into their soy sauce like adding sugar, hot sauce. And it still delicious, full of nutrients, greenish vegetables, proteins.
What kind of banh my or it is a kebab? The Kebab we get in Vietnam got fix here and there to fit local taste so it doesn't like Turkis's Kebab or something. But the Banh my you get got ketchup and all that bs? Just chose other spot that suit you,buddy

Banh mi means bread and at the same time the name of the sandwich. So by saying Banh mi sandwich, he basically is saying Bread Sandwich. He should just say Banh Mi.

Dear god don't make it political. Lots of older folks call it Saigon regardless if they are Northerners or Southerners, simply because that's the name they've always known, then they passed that on as a habit to their children. The first bahn mi I ever had. It was a rainy night when I arrived in Saigon. I checked in at the hostel, put my bags down and started to wander and found myself on the (unbeknownst to me) famous bui vien street. And I saw a woman, can remember if it was her, slinging bahn mi. I decided to give it a shot and it changed my life.

That might not be by choice, but for all the fees, licenses and permits she would need to have. If she can still live comfortably and sell for so low, I say stay where you know you're loved. Don't come to the States just to suffer or turn your back on your ideology, she'll turn into us, and we're pretty awful.

As a vietnamese, don’t come to HaNoi to try bánh mỳ, they always put ketchup and mayonnaise instead of the meat sauce, studying 6 years in hanoi has been hell for me cus my go to choice for a quick healthy balance meal is ruined
You probably don't know but mayonnaise, ketchup, or chili sauce or hpt sauce are all foreign, western productions. It economical and easier to produce (just need to buy it from store) and it still acceptable and still delicious. You could get more expensive banh mi for more things in your banh mi but he sauce are depends on the version of banh mi you're eating. Maybe it a braised beef, pork, ect.
But not only mayonnaise and ketchup, banh mi are also filled with soy sauce
They could balance the taste of the soy sauce by putting spices into their soy sauce like adding sugar, hot sauce. And it still delicious, full of nutrients, greenish vegetables, proteins.
What kind of banh my or it is a kebab? The Kebab we get in Vietnam got fix here and there to fit local taste so it doesn't like Turkis's Kebab or something. But the Banh my you get got ketchup and all that bs? Just chose other spot that suit you,buddy
If its above $1 they’ll more likely have different sauces. It’s just that for cheap banh mi, ketchup and mayo are easier and cheaper to get, which is suitable for students - their main customers

As a vietnamese, don’t come to Saigon and try their HOISON SWEET CHILLY PHỞ. Not the authenic and taste like sh*t, also their Bún Riêu is crap (tomato and beef only with no crab flavours). Food overall sweet and too much bột ngọt, all the food is ass

For those who dont know, a lot of Vietnamese like myself hate Hồ Chí Minh because the name belongs to the Vietcong leader. That's why a lot of vietnamese people will prefer to say Saigon over Hồ Chí Minh.

Dear god don't make it political. Lots of older folks call it Saigon regardless if they are Northerners or Southerners, simply because that's the name they've always known, then they passed that on as a habit to their children. It's just a nostalgic and historic name. Lots of people just prefer it that way.

At my local area, a Banh Mi only takes 12-15k VND (almost $ 0.7). It's my savior during the school period, from secondary school to colleague.
The first bahn mi I ever had. It was a rainy night when I arrived in Saigon. I checked in at the hostel, put my bags down and started to wander and found myself on the (unbeknownst to me) famous bui vien street. And I saw a woman, can remember if it was her, slinging bahn mi. I decided to give it a shot and it changed my life.
Even though I don't really like any foods that are pickled (Unless they are pickles themselves) for $1.11 I would definitely eat that no matter what!
