    I've been interested in trying sous vide for a while now and I got a sous vide circulator for Christmas last month. I've used it a few times just to figure it out. Just last night I cooked four 1" thick bone-in pork chops, but instead of searing them in cast iron I seared them with a blow torch. They turned out PERFECT! My family was jumping out of their skin! I've been cooking pork chops for years, but these may be the best ones I've ever cooked!

    Been 5 years! So, I’m gonna try this tonight with my rib eye. One thing I’d suggest to do when setting up your tub, throw some hotter water from the tap to speed up the heating process, if you’re trying to get it done a bit quicker 🤙

      Do me a favor and look at the intersection between smoking and sous vide. Seems like a ton of opportunity for meats that might dry out with an exceptionally long smoke.

      I did corn on the cobb the other day with salt pepper and butter. It was amazing. If you really want to try something, do a chuck roast for 48hrs with a packet of limpton onion soup mix as a "rub". I did it at like 150*. It will be epic.

      Yes, I agree brother. The only flavor missing was the dry-aged steak flavor from a fine steakhouse, but I can fix that by aging me some steaks!! LOL

    Love your videos, you have helped me make better bbq somany times! Maybe I finally get to return the favor. Some SV advice. 1. Fill the container with hot tap water, that cuts down prep time, and takes the work off the back of the SV unit, 2. Cover and wrap the entire unit with towels, especially in longer SV, to help stabilize and maintain temp without swings, and to help lessen evaporation. I would live to see you do a 48-60 hour SV on a brisket, then ice shock it, fridge it back down to about 40, then put on smoker and bring it back up to about 160. Will change your life!! Darrin Wilson at Fire and Water is the master at this.

    Ive see a bunch or your videos and i think why people think you over cook everything is due to the fact that you dont have very good lighting...

    I love doing sous vide round roasts and brisket flats at 129 f for 48 hours, then torching with my propane torch. Comes out perfectly every time.

    I've been using my Anova for about two years now. You don't need to cook it so long. I usually set it up at 128 degrees for 1 hour. You can leave it in longer if you need to finish cooking side dishes and stuff, but the meat will be done in about an hour.

    Great video T Roy..
    I love the Anova unit. Truthfully the WiFi and Bluetooth are iffy and not completely reliable. BUT and it’s a big BUT..The unit itself is
    Awesome and a tank. The temperature controls will keep water at exact temperatures for extended cook times. Have the 900 watt unit and is a real work house. On my 4th long cook project. Two Beef Ribs, 1 corn Beef..1 Brisket. End results are truly moist, tender meats..Getting ready to try pork and chicken .

    I do mine essentially the same way with the same device however i melt butter and baste my steak in it a hot skillet on high for about 30 secs to 1 min each side. The butter makes all the difference in the world.

    I have had that cooker for a while. We doing out Christmas turkey and will seal it with a searzall. Thinking of doing a brisket during the summer smoke for 3 hours then sous vide then sear just to keep it juicy lol glad you enjoyed will let you know how the turkey pork and beef go. But I know the steak is amazingly fine..

    Wow that looks amazing, I use Sous Vide for all of our steaks with butter and It's Incredible seasonings and they are amazing. I cook them exactly like you do. Awesome technic for a perfect steak every time. You can also set the Sous Vide temp a little lower for your target temp then set up a pellet grill to a high temp for the final few minutes getting a crust and end up with the same effect but adding the smokiness to the steak. Hope you are doing well in your new home?

    T-Roy I like to SV Sirloin steaks. It takes a great tasting but tough piece of meat and gives it the juiciness and softness of Fillet!! Of course Prime Ribeye works well to!! (try corn on the cobb at 180 for 30 min Wonderful stuff!!)
