Let me tell you a story...

This one isn’t about pasta, but rather this pasta knife…
Originally a 1 of 1, custom creation from Ashi San in Sakai, Japan. Known for their lightweight Swedish steel, made with Japanese precision.
I had been a collector of all his different knife styles, my entire career. During my time in LA I was on the hunt for a noodle knife, either a Chinese clever or a soba knife, something for hand cutting noodles, like I saw during my time in Italy. Similar to a vegetable Nakiri, but longer without any curve.
Jonathan @japaneseknifeimport happened to know Ashi, and said he could put in a request for a custom order, but it may take up to 3 YEARS. Knowing I’d still want this down the road, I said why not, and put down a deposit.
Flash forward 4 months later, Jonathan calls me and says he has my knife. Ashi was so intrigued about making something unique and different that he did he right away. And alas, my noodle knife was born! He has made a few more replicas since, if you’re lucky you might just find it over at @jknifeimports
